FROM MARU ASIAN TAPAS BAR & LOUNGE
Maru is one of the newest restaurants in town,
but life as a restaurateur is not new for owner
Alex Han. Han also owns Izumi Sushi and Grill,
Peachwave Yogurt and Pho. Maru specializes
in Japanese and Korean food and a full sushi
menu.
Han is Korean, and he chose this recipe for
japchae because it is a dish that his wife
regularly makes for them to eat at home.
The recipe below doesn’t call for strict
amounts of the vegetables because japchae
is highly fl exible — a home cook can use any
vegetables that they like or happen to have
on hand. It’s also a fast dish to cook, coming
together in only about 5 minutes or so once
the ingredients are prepared. Hon-dashi may
be the “secret ingredient” in making home-
cooked Asian foods taste like restaurant
foods. “Hon-dashi” translates to “the real
thing” and is a sweet and mildly smoky broth.
Try a rich chicken or vegetable stock if dashi is
not available.
Maru manager Dennis Borchers says he
loves all of the food at Maru and has even
lost weight since the restaurant opened in
November 2013. “It’s so fresh and so healthy,”
Borchers says. “The tapas dishes that we
have are meant to be shared,” he explains.
“The portions are not giant but not small, and
a table can get several things and share them
so they get to try many different things.”
Borchers thinks Maru has the best desserts
in town. Traditional Japanese desserts such
as mochi ice cream (in green tea, red bean,
mango or strawberry fl avors) are offered
alongside ginger crème brulee, wasabi
cheesecake and warm brie cheese with
candied apples and spiced walnuts. The
entire Maru menu is extensive. With 31 cold
tapas options, 39 hot tapas options and
45 sushi rolls along with several entrees,
everyone is sure to fi nd something they enjoy.

3.25 ounces noodles made from sweet
potato starch
a handful of mixed vegetables: Maru uses
julienned yellow and green onions, julienned
carrots, chopped Napa cabbage, strips
of green and red bell pepper and 3 to 5
mushrooms
3 tsp sugar
pinch of black pepper
1/2 tsp Hon-dashi
1 tsp salt or to taste
1 tbsp sesame oil
1/2 tbsp vegetable oil
Cook the glass noodles according to package
directions. Pre-heat pan and add the
vegetables and all of the seasonings to the
hot pan. Stir until the noodles are hot and the
vegetables are soft. Add salt or soy sauce if
desired.
