FROM SWEET CREEK FOODS
Sweet Creek Foods is a small, certifi ed-organic cannery
located in Elmira. Everything it uses is organic and locally
sourced. Sweet Creek makes its own pickles and pickled
items such as beets and relishes, canned Oregon albacore
tuna, enchilada sauces and fruit spreads (the FDA doesn’t
allow a food producer to call their fruit a “jam” unless
it contains more than a certain amount of sugar). In
addition, Sweet Creek co-packs for other farms, large and
small. “A lot of times farmers will have extra tomatoes or
berries and they can come to us and we do small-batch
canning,” says manager Zach Fuller. “It’s great for farms
and independent people who want to start a business.”
Fuller eats a mostly gluten-free diet and loves the
enchilada sauces because they are always gluten-free and
come in fi ve different fl avors: hot, mild, medium, green
and chipotle, whatever he’s in the mood for. “Enchiladas
are easy to make and great for parties and potlucks,” Fuller
says. “Any and all ingredients can be subject to your own
personal creative taste and made to cater to vegetarian,
vegan and gluten-free diets.” Fuller says he makes a
couple of pans of enchiladas and freezes them for easy
eating on busy nights. “Enchiladas are an easy and quick-
to-make dish that feeds the masses and experimenting
is encouraged!” he says. “Hope you folks enjoy these

cooking, add in beans, onion, tomatoes, garlic, chili and
cumin powder. Salt mixture to taste. Cook off the liquid
from the tomatoes or drain if necessary. Set mixture aside.
Using a frying pan and a pot lid for the top, heat the tortillas
until soft and pliable. Cover the bottom of a 9x13-inch
baking pan with 3 to 4 tablespoons of the Sweet Creek
Foods red or green enchilada sauce.
Fill and roll each tortilla with the desired amount of fi lling.
Place rolled enchiladas side by side in the bottom of the
prepared pan. Evenly pour the remainder of the sauce
over the entire pan. Smother enchiladas with cheese.
Serves 4 to 6
For the fi lling:
1 lb chicken, beef, fi sh or chopped veggies of choice
1 tsp ground cumin
2 tsp chili powder, or to taste
Preheat oven to 350 F and bake enchiladas for 30
minutes, until cheese is melted and sauce is boiling in the
pan. Remove from oven, cool to desired temperature and
enjoy.
