GRILLED SUMMER SQUASH SALAD WITH
BLUE CHEESE, TOASTED WALNUTS
AND BANYULS VINAIGRETTE
Serves 4
For Vinaigrette:
1 shallot, minced
1 tbsp banyuls (a French fortified wine)
2 tbsp extra virgin olive oil
1 tbsp canola oil
salt and fresh ground pepper
1 lb summer squash (green zucchini is
our favorite for this)
1/4 lb Roquefort cheese or other high
quality blue cheese
1/4 cup walnuts, roughly chopped and toasted
Slice the zucchini lengthwise into 1/4-inch
thick slices and brush with a little olive
oil. Season lightly with salt and pepper
and grill over medium heat until cooked
through, about four minutes a side. Set
aside to cool.
In a small bowl whisk together banyuls,
shallots, salt and pepper. Slowly whisk in
the olive oil and canola oil to blend.
Toss the grilled zucchini with the dressing,
crumbled blue cheese and toasted
walnuts. Taste for seasoning and serve.
