1 whole chicken, split down the center,
back portion removed
Marinade
1 cup olive oil
1 cup lemon juice
1 tsp. lemon zest
1 tbsp. chopped rosemary
1/2 tsp. granulated garlic
1/2 tsp. dried thyme
salt and pepper to taste
Mix marinade, reserving 1/4 cup. Pour
remaining marinade over chicken.
Marinate chicken for 3 hours in
refrigerator. Roast chicken in oven for 45
minutes at 375 degrees or until chicken
reaches an internal temperature of 165
degrees. Remove from oven, baste with
remaining marinade, and serve.
