answer that! [Laughs.] Our intent is to get the
freshest ingredients out to the table. The
sushi’s taste relies on the fish, so if we don’t
get the good-quality, fresh ones, we couldn’t
gain the recognition. Also the sushi rice has
the sweetness. It may be the simple formula
of the mix of salt, sugar and vingear. It’s a
combination of the slice of fish plus the rice
itself, and our chefs do care about the rice
itself. Worst kitchen disaster? Our worst
experience ever is that our drain system was
not kindly built. It goes from our building to
the sewer line, about 150 yards. On one busy
Friday night two to three years ago, it got
backed up, and it came back to the kitchen, so
it became very smelly. We had the guys
working behind the counter, but because of
the odor coming out of the drain pipe, we had

Why do you think you won this award? I
think I do my best and I try really hard. We
have the best breakfast around. I have a real-
ly excellent cook for breakfast. Whenever
people come here, we’re always friendly. I
treat people like my family. Worst kitchen
disaster? Well so far we really haven’t had
anything really bad happen. One day our
dishwasher broke for an hour. The kitchen
was full of dirty dishes. So far that’s the
worst thing that’s happened so I’m kind of
lucky. Editor’s note: One of our employees
is a big fan of Brail’s and when I told him
they had won in this category he said, “The
portions are huge, the service is great and
once Joy knows your name, she’ll never for-
get it. She’ll shout across the room when
you come in the door.”

Studio One doesn’t serve your classic
Sunday brunch. Breakfast begins at 7 am
every day and on weekends the line out to
19th tells you what time it is. Breakfast is
served until 3 pm on weekdays, 4 pm on
weekends. Lunch starts at 11. No dinner.
