Why do you think you deserve this award?
It has to do with my class as much as me.
It’s a good class. A lot of spirit, a lot of love
in the group. And I’ve been doing this for a
long time. I’ve been teaching in Eugene for
about 14 years. Everyone’s accepted,
everyone is welcome. What’s the oldest
item in your wardrobe? I have an old denim
jacket that my sister made for me in the
’70s. It’s kind of ’70s disco style with big
lapels. It’s almost knee length.

Do you think you really deserve to win?
Definitely. I know how it is for me on my
side, but I’m probably answering more for
customers who come back in time and time
again with big happy smiles. It’s just caring
and paying a lot of attention to detail. I’m
kind of anal retentive. I’m really critical
when I go out to eat. I try and put myself in
the customer’s situation and do it the way
I’d want it done. And it’s important to have
knowledge about what it is you’re serving,
be it wine or food. We serve a lot of exotic
things, so people like little explanations and
stories about what they’re eating. Care,
overall, would be the word. What’s the old-
est item in your wardrobe? A cashmere
Chesterfield — a long topcoat, very old-
school. Almost 1800s-style. I wear it when
the occasion presents itself. I got it at a vin-
tage store when I was about 15.

have us believe. A seasoned professional,
Les Castle has been loosening knots and

the past 30 years. Do you really deserve to
win this? Yeah, sure. I deserve to win. Why
not? I have loyal, loving clients who read
EW and who fill out the form to elect me.
What’s your greatest fear? That George W.
Bush will get re-elected. I also fear getting
old and ending up in a nursing home. I
often go to nursing homes to work on peo-
ple and it would be awful to live in one.
