Crab souffle features make-ahead quality

Hot Crab Souffle
12 slices w h ite bread,
frozen so crusts can be cut
off easily
2 cans crab meat, shrimp
or tuna ( I used 1 crab and 1
shrimp)
4 cup mayonnaise
1 onion, diced
1 small green pepper, diced
1 cup celery, chopped
3 cups milk
4 eggs beaten
1 can cream of mushroom
soup, undiluted
2-3 cups grated Cheddar
cheese ( I use 3 cups >

Cut crusts from frozen
white bread and quarter
bread Butter a 15-inch
casserole and line with six
slices of the bread
Drain crab and shrimp
meat and put into a col-
la n d e r
and
rin s e
thoroughly with cold water
Mix crab and shrimp with
m ayo nn aise and diced
vegetables and spread over
bread Sprinkle oil one cup
grated cheese
Next, put slices of bread
on top. M ix m ilk and
beaten eggs and pour over
mix Cover and refrigerate
overnight
Rem ove
fro m
refrigerator and bake for
15 minutes at 325 degrees
Remove from oven and

mushroom soup over the
top. then add remaining
two cups of grated cheese
Return to oven and bake
another hour Serve im

Cake
Mix these ingredients in
a large mixing bowl:
2 cups flour
2 cups sugar
3/4 teaspoon salt
M ix the following ingre
dients in a saucepan and
bring to boil:
1 stick m argarine
1 cup water
dusted i with cocoa) 11-inch
by 16-mch jelly roll pan or
cookie sheet with sides at
325 degrees for 30 minutes
Test cake to see if middle of
cake is done. Batter is
about one inch thick
Ice cake while hot
Icing:
1 stick margarine
4 tablespoons cocoa
6 tablespoons m ilk
Vi cup plus 1 tablespoon oil
4 tablespoons oil
Pour this m ixture over
the flour-sugar mixture in
the mixing bowl
Add the following and
mix well:
2 beaten eggs
1 teaspoon baking soda
Vi cup buttermilk
1 teaspoon vanilla
Bake on greased and

Place over medium heat
and melt, but do not boil,
