convention they asked for volunteers to
do various jobs I volunteered to help in
the kitchen, and I just learned as I
went.”
The recipe reads like a list for a semi­
annual grocery shopping trip.
It includes 80 pounds of ground beef.
20 pounds of pork, 10 pounds of onions,
16 pounds of carrots, 12 pounds of dry
bread crumbs, 80 eggs, 2 gallons of
m ilk, a gallon of tomato juice and 120
pounds of potatoes.
Under the practiced eye and hand of
Frank Kircher of Boring, the mountain
of raw ingredients is transformed into
meat loaf and mashed potatoes for 400
people.
Kircher had occasion to practice his
skill again last weekend for a semi­
annual convention his church holds in
Woodburn.
The thought of K.P. duty on all that
food might buckle the knees of less
courageous cooks, but Kircher has been
undertaking such projects for 31 years.

eight congregations from Estacada to
Portland. Kircher serves as presiding

congregation.
For the four dinners and suppers,
Kircher prepared meat loaf, Swiss
steak, roast beef and baked chicken. He
said his favorite crowd-size meal is
Swiss steak. “ I t ’s just so easy to
prepare, and people always like it.”
Kircher had only one experienced
cook on his crew at this year’s con­
vention, Marion Wood from Portland
who has worked for 38 years as a hotel
chef.
Wood prepared the gravy for the
meat loaf meal served at noon Sunday,
and Kircher said Wood’s meat sauce
“ always makes the meal. He makes the
best gravy I ’ve ever eaten.”
The gravy is simple, Wood said. “ I
just take a beef stock and add bay leaf,
Roux (pronounced “ rue” ) is a semi­
liquid thickener of fat and flour which is
mixed spices, some sweet basil, onions,
celery, garlic, salt and pepper. Then
when the liquid is boiling, I add my
roux.”
Almost 1,100 Jehovah’s Witnesses
from Multnomah and Clackamas
counties were in attendance, and up to
450 were served at each meal.

K irc h e r is not, however, a
professional cook. He operates a small
mechanic shop on Southeast Orient
Drive. His large-scale culinary ad­
ventures are strictly a hobby.
“ I always liked to work around food,”
he said. “ Back in 1947 during a church

used the m ixer before me and shut it
off but left it in high speed,” he said.
“ As soon as I engaged the motor,
those beaters picked up that tuna
mixture and spread it all over the
ceiling. The milkman happened to be
making his delivery then and he got
plastered, too.”

Coast Guard Boatswain’s Mate Second Class Kevin J.
McDevitt, son of Dolores Dickie of Sandy, is participating
in “ Operation Deep Freeze” in the Antarctic.
He is assigned to the Coast Guard cutter Glacier,
homeported in Long Beach, Calif.
This marks the 24th consecutive year of civilian and
m ilita ry support for the U.S. Antarctic Research
Program conducted by the National Science Foundation.
McDevitt joined the Coast Guard in September 1974.

A surprise celebration attended by 100 guests was given
to honor Jim and Clara Emerson of Sandy on their 40th
wedding anniversary. The couple was married Nov. 23,
1938.
The party was given by Mrs. Emerson’s brothers and
sisters and by the couple’s children. It was held in the
Oddfellows’ Hall in Sandy Nov. 25.

ever helped serve was in New York in
1958. “ I was working in the refreshment
stands at the polo grounds, and there
were 253,000 of us there,” he said.
