occasion a few days early with
M r and Mrs Phil Stephenson
of P a lm d a le , C a lif., who
com m em orated th e ir 25th
wedding anniversary June 25 at
the Essex, compliments of New
West Magazine.
Stephenson was the second
place winner in a recent sub­
scription contest conducted by
the magazine As a winner, he
was awarded a $2,500 party of
his choice
The announcement of the
winning entry coincided with
the Stephenson s anniversary,
thus the party at the Essex
During the evening, a buffet
style dinner w as served to more
than 90 guests

for the wrong kinds of food

jams and jellies containing
sugars,“ according to Mrs

packing cooked food into hot
jars and sealing without ad­
ditional heat processing
Even though the jars and lids
are sterilized before they are
filled, microorganisms such as
molds and yeasts in the air can
easily come Into contact with
the ja r. the lid and the food
during the filling process.
These organisms will grow in
the canned food and cause
spoilage.
“ Worst of all. If meats,
poultry, seafood, or vegetables
are canned by the open kettle
method, the bacteria that cause
botulism, an often fatal food
poisoning.

The open kettle method of
canning is safe for use with
jama and jellies because their
high sugar content inhibits
bacterial growth.
A boiling water bath should
be used to process high acid
foods such as fruits, tomatoes
