look favorably at careers in
fa rm in g , agri-business and
other a g ric u ltu ra lly related
careers.

nature film “ Vanishing Wilderness” comes to the Sunset
Theater in Sandy. The film w ill be shown on Nov. 19 for
one day only.

H’ers to become more involved
in all areas of agriculture, farm
operations and management,
food processing, product
marketing and disease control.

conservation,
operation of farm tractors and

com m odity m arketin g are
some of the activities un
dertaken by youths in the 4-H
agricultural program
In Clackamas County, over
1.000 4-H’ers are exploring
these projects in a "learn-by-
doing’ ’ situ a tio n under the
guidance of teen and adult
volunteerleaders. Of this total
almost jm O 4-H’ers from 9 to 19
years of at',»’ are pursuing the 4-
11 beef project, adds Zurcher.

Just how large should the
Thanksgiving turkey be?
That depends not only on the
number coming for dinner, but
whether they w ill be staying for
an evening snack, and whether
you want leftovers to nibble on
or freeze, says M arilyn Lunner,
Oregon State University E x
tension home economist for
Clackamas County.
For turkeys under 12 pounds,
allow 34 to one pound per
serving. When buying larger
birds, over 12 pounds, allow
to 4* pound per serving. Allow
additional weight depending on
the post-holiday turkey uses
you have in mind.

The "fe e l” test for doneness

cooked when the thickest part
of the drumstick feels very soft
when
pressed
between
protected fingers
Care properly for the cooked
turkey, cautions the Clackamas
County Home Extension Agent.
Soon after serv ing, refrigerate
the meat, dressing and gravy in
separate containers. When
using leftovers, reheat only the
amount to be used Heat left
over gravy to a full rolling boil

to three days for thawing. Or,
place the bird in a large bag
and allow to thaw at room
temperture This assures that

the entire thawing time. Allow
about one hour per pound for
thawing
If the bird is to be stuffed, do
so just prior to roasting it. The
dressing may be baked
separately in a covered pan if
