Have butcher cut pocket in each chop, slitting from fat
side and cutting almost to bone. Season with salt and
pepper. Combine remaining ingredient and stuff pockets
in chops, close openings with toothpicks along fat edge
inserting them at an angle so they don't keep chops from
touching pan. Lace w ith string if desired. Add 54 cup hot
water; cover tinhtfy and simmer until tender. About 1 hour
and 30 min. Add more water if necessary. Remove tooth
picks and serve. Serves 8.
