Hood-Land Happenings By the 6 2 2 -4 2 3 2 Labor Day weekend In Hood- land was filled with fun a f fa irs as usual! The cute in vitations from Carol and Rus Konell announced their second annual •• 2 E.OJS." ( To End Of Summer) Party and it was indeed a delightful ending of a very short summer! Surely half of Hoodland must have attended this party - ' stopped countli< at 70 -which was held on the lovely grounds of the Konell home at Wildwood. With the co-operation of the weather man, the setting was perfect and the dinner was perfectly delicious! Carol and Rus pro vided a richly-laden buffet for their many guests to enjoy and everyone I talked to seemed amazed by the rolling expanse of carefully tended lawn, flower beds, rockeries, duck-filled lake aid lovely patio area! A ll created by the Kcnell’ s in their “ spare ’’ tim e - along with raising a fam ily of five young sters! ( Father and 1 left fa irly early and while turning our ca r around we somehow managed to miss the driveway and backed over a hillside rockery. A ll that trouble over one silly word? Oh w ell, what’s a bit of confusion over names. We now have Bowman’ s M t. Hood Golf and Country Club, the M t. Hood Golf Club ( a gold and social group) and the M t. Hood Country Club - which is a w ater system in Brightwood owned by the Jack C o lliers - not to be confused with Snoop’ s neighbors the Gene C olliers who have nothing whatever to dc with the naming of clubs or w ater districts! Apologies to Sally “ Grandma Bun” Hurlbutt for omitting her name last week. She was co hostess with Jane M akelaar at a lovely bridal shower for M elissa Anderson and Jane called to te ll me “ she didn’ t deserve a ll the cred it” . ( Bet Sally didn’t mind my o ver sight?). . .And Kathy Luken»s husband is named Roy and is known as “ Butch” - never as “ J im "! Now that the day.» are cooler and there is a touch of fall in the a ir , perhaps your fam ily w ill anjoy macaroni and cheese either as a main dish o r' as an accompanying one. 1 had a r e quest for it at our house this week. OUR FAMOUS MACARONI & CHEESE ________ Enough cooked __________ macaroni __ to f ill a large sized casserole o r baking pan half fu ll. (This is 1 -1 /2 cups of dry macaroni. You may use as much as 2 cups of dry macaroni if you have a large fa m ily .) Put cooked macaroni in a greased cas serole. Add two w ell beaten eggs, salt and pepper to taste, and one pint of m ilk. M ix and add Ched dar cheese. Use a very coarse grater to grate 1 pound to 1 - 1 /4 lbs. cheese. Use about 3 /4 lb. of cheese to mix in the casserole, being sure that enough is saved to cover the top w ell.. Bake in a hot oven, 400 degrees, for about 40 minutes until cheese, m ilk , etc., is w ell set and brown on top. From the files of the P u re - foy Hotel, Telledega, Ala. (Post photo) HAMBURGER RELISH (B IR D IE ’S ZUCCHINI RELISH) Grind coarsely and mix to gether 10 cups zucchini squash, 5 cups ground onions, 1 red and 1 green pepper. Sprinkle with 5 tablespoons sa lt, let stand overnight. D rain. Rinse. D ra in again very thoroughly. Add 2 -1 /2 cups vinegar, 1 tablespoon dry mustard, 1/2 teaspoon pepper, 3 -1 /2 cups sugar, 2 teaspoons celery seed and 1 teaspoon nutmeg.Simmer 30 minutes or until c le a r. Sift together: 2 cups flour (all-purpose) 2 cups sugar 2 teaspoons soda 2 teaspoons cinnamon 1 teaspoon salt Add slowly and alternately: 3 cups finely grated carrots 1 - 1/2 cups cooking oil 4 eggs Fold in: 1/2 cup chopped nuts Bake ln a large greased and floured pan either 12” x 9” x 2 - 3 /4 ” or 15" x 9” x 2 - 3 /4 ” at 350 degrees fo r 35 to 40 minutes. Frost with the following: FROSTING Cream 6 oz. cream cheese (room tem perature) with 1/2 cup butter. Add 1 lb. sifted powdered sugar and 2 teaspoons vanilla. Beat well with electric m ix e r.
