Some of us who are part and full - time work­ ing mothers hav* a summer vacation (?) now and there isn't an *xcus* for neglecting the baking. Did you notice that there was some question in my mind about the summer months be­ ing vacation time when there are such chores as catching up on a winter’s Ironing, clean­ ing In the corners, th* win­ dow sills, and washing the windows, now that th* bright sun r*v*als their true d*gr*e of dirtiness. Then there’s the neglected entertaining to bring up to date. Oh yes, I must help pick a winter’s supply of ber­ ries for the freezer and enough to make jam. This helps me to discover some laxy muscles. I am consoled by the fact that maybe all this will help me tc shed a few pounds and regain a slim figure. Anyway, it’s fun dreaming. Of course, this means very small servings of these des­ serts, girls. SUNSHINE CAKE 10 egg whites 1 teaspoon cream of tartar 1 tablespoon lemon julc* 1 1/2 cups sugar, sifted 1 teaspoon grated lemon rind 6 egg yolks 1 cup plain flour 1/4 teaspoon salt Beat egg whites until foamy and add cream of tartar and lemon juice and beat until they hold a point Add sugar grad­ ually and beat until well mixed. Beat egg yolks until thick and add gradually to whites. Add lemon rind and flour a little at a time. Mix thoroughly. Put in tube par (angel food cake pan). Bake in slow oven at 325 degrees for 1 hour or until done. Invert pan for a little white. Then re­ move and ice while slightly warm with orange icing. ORANGE ICING Grated rind and juice of 1 small orange 1 Tablespoon lemon juice 3 Tablespoons melted mar gar - in* 1/3 teaspoon salt 1 egg yolk, unbeaten 1 lb. box confectioner’s sugar, sifted. Mix together until smooth. U icing is too thick to spread, add a little orange juice or milk. This is the original re­ cipe of Mrs. Mack Karrh, Berry, Ala. It was sent to me by her sister, Mrs. Belle Shep­ herd of Attalla, Ala. She says it is delicious and she is an excellent judge, as she makes perfect cakes. Mrs. Karrh sent this recipe to "Better Homes and Gardens Magazine” about 35 years ago. They tested and endorsed it. CHOCOLATE MARSHMALLOW CAKE 3 sqs. bitter chocolate 2 cups sugar 1 cup butter 2 1/2 cups flour 1/4 teaspoon salt 1 teaspoon soda 5 eggs, separated 1 cup buttermilk 1 teaspoon vanilla 1 cup chopped nuts i and fold tn egg whites which hav* been beaten until stiff. Baker s Ger- man’s Sweet Chocolate, bro­ ken 3 Tablespoons butter 3 eggs, slightly beaten 1 teaspoon vanilla 1/2 cup coarsely chopped pe­ cans unbaked 9-In. pie shell Combine cereal and water; .et stand until water is ab­ sorbed. Heat sugar, salt, and syrup to a boll over high heat, stirring to dissolve sugar; boil ! minutes. Remove from heat, idd chocolate and butter; stir until blended. Slowly pour over eggs, stirring constantly. Add cereal mixture, vanilla, and mts; mix well. Pour into pie jhelL Bake at 375 degrees about 50 minutes, or until fill­ ing puffs and begins to crack around edges. CooL Serve with whipped cream, if desired. Serves 6 to 8.
