Extension Agent Fat Content of Frozen Desserts Varies Frozen dairy desserts on the market today include ice cream; ice milk, fruit sherbet, water ices, and ice cream containing egg (sold as frozen custard, French ice cream, or French custard ice cream.) What is the difference between these frozen desserts? Mrs. Helen McDowall, Clackamas county home extension agent, reports that one big difference is the fat con­ tent. Standards of Identity established by the Oregon State Department of Agriculture say that ice cream must contain at least 10 per cent milk fat. Ice milk must have at least 2 per cent, and not more that 7 per cent milk fat. Frozen custard, French Ice cream, and French custard ice cream have the same percentage of milk fat as regular ice cream, plus the addition of not less than 1.12 per cent of egg yolk solids. Sherberts must have not less than 1 per cent and not more than 2 per cent milk fat. Water Ices con­ tain no milk fat. Many people believe sherbert is lower in calories than ice cream. This may or may not be true, depending upon the fat content of the ice cream and the amount of sugar used in the sherbert. Most sherbert Is tart and con­ tains considerably more sugar than ice cream. On my last trip I went in from De­ vil’s Peak Lookout, planning to make an easy descent down to Sal­ mon River Trail. I’d hoped to cut in at the "falls”, fish down river for a while, and then walk out Salmon River Trail tc Welches, where a car was wait­ ing for us. As it was, things turn­ ed out just a little different. My brother-in-law, (Jerry McKenzie, Welches) went with me. We had estimated Devil’s Peak Lookout to be approximately one mile from the river, as the crow flies. Plunging into the brush, we encountered some of the rough­ est and wildest terrain imaglneble. Soon it was evident our only course of action would be to fol­ low the ridges and game trails. It was too steep to just "walk down to the river”! One ridge was so steep we could look over on both sides. In places by reaching out with our fishing poles we could touch the tips of good-sized fir trees growing sixty to eighty feet be­ low! These views were breath-tak­ ing, but the going was hard. Walk­ ing down-hill is not all it’s crack­ ed up to be, it can be mighty tough on your feet and knees. Three hours later we broke out onto Salmon River Trail, about half- mile down river from Goat Creek. We crossed the trail and climb­ ed down the canyon to Salmon Riv­ er below. That was steep, but noth­ ing like what we’d just been through. We came out on the riv­ er right above the first of a ser­ ies of waterfalls. After the climb down, river water sure felt good on our hot, tired feet. It was cold in fact, I could only stand it for a few seconds at a time. We began fishing two holes above the falls. I started with a salmon egg on a single egg hook and split shot about eighteen inches above. I hooked into a couple of nice sized rainbow.
