Tasty Recipes Add New Zest To Pot Roast
Attracts
Housewives wouldn’t be house­
wives, If they didn’t look for and
find new recipes and new ideas
to vary the regular stand by
foods. Here are selected recipes
with new ideas for three meat
dishes that will make your mouth
water just to read them.
The favorite pot-roast will have
a new taste with the addition of
tomato paste, ripe olives and sour
cream for its gravy ingredients.

POT-ROAST WITH
TOMATO GRAVY
3 to 4-pound beef arm or blade
pot-roast; 1/4 cup flour; 2 teas­
poons salt; 1/8 teaspoon pepper;
1/2 teaspoon garlic salt; 3 table­
spoons lard or drippings; 1 large
onion, sliced; 1/2 can (10 1/2 oun­
ces) condensed beef consomme;
1/4 cup water; 1 tablespoon Wor­
cestershire sauce; 1 can (6 oun­
ces) tomato paste; 1/2 cup sliced
ripe olives; 1/2 cup dairy sour
cream.
Combine flour, salt, pepper and
garlic salt. Dredge pot-roast in
seasoned flour and brown in lard
or drippings. Pour off drippings,
add onion, consomme, water and
Worcestershire
sauce. Cover
tightly and cook slowly 3 hours.
Add tomato paste and olives and
cook 1/2 hour or until meat is
tender. Remove meat to a heated
platter.
Thicken cooking liquid for gravy,
if necessary. Stir a small amount
of gravy Into sour cream and add
mixture to remaining gravy. Cook
just until heated through. 6 to 8
servings.

slowly 35 to 40 minutes or until

a one-dish meal called Pork Chop-
Vegetable Combo, composed of
frozen Frenched green beans,
grated carrots, celery and mush­
room soup, topped with crushed
shredded wheat and herb seas­
oning.

cuits; 2 teaspoons butter or mar­
garine; 1/8 teaspoon thyme.
Brown chops in lard or drip­
pings. Season. Combine green
beans, carrots, celery and water
in saucepan. Bring to a boll. Add
mushroom soup, place vegetable
mixture in a 12 x 9 inch baking
dish. Arrange chops on top. Cover
tightly and bake in a moderate
oven ( 325 degrees to 350 de­
grees F. )
Combine
crushed shredded
wheat, butter or margarine and
thyme. Uncover baking dish and
sprinkle pork chop-vegetable mix­
ture with crushed biscuits. Con­
tinue baking 15 to 20 minutes or
until done. 6 servings.

6 pork rib chops, cut 1/2 to
3/4 inch thick; 2 tablespoons lard
