News’ photo) Couple finds home on the range with ‘just plain good eatin’ at Country Folks By demonstrating the truth of their Country Folks Restaurant motto, “Just Plain Good Eatin’,” Selma residents Stan & Alicia Kinsey are showing that they can dish it out. Country Folks (formerly The Boarding House Reach) is alongside Hwy. 199 in Downtown Selma, near the south end of Draper Valley Road. Breakfast, lunch and dinner are served all day, and current winter hours are 7 a.m. to 8 p.m. seven days a week. Food can be ordered to go by phoning 597-2111. Home-cooking with large portions is the order of the day at the eatery, owned by the couple for the past five months after buying it from Selma residents Ken & Sharon Adolphson. It’s a friendly “heart of Selma” locale offering “good food at good prices,” said the Kinseys. There’s plenty of good- natured bantering, and atten- tive service. The couple has long-term backgrounds in food service although before relocating from California two years ago they also op- erated a radio-controlled model airplane business. “We love the social as- pect of running a restau- rant,” said the couple, “because we like people.” They share the duties of keeping such a business running smoothly with fam- ily members. Stan is the chief cook and repairman; she’s into waitressing, cook- ing and washing dishes among other chores. Also working on needed tasks are their daughter, Desiree, and her husband, James Eddy; plus Stan & Alicia’s son, Brandon, 13. “We’re family oriented and welcome children,” said the couple. Another reason for the popularity of Country Folks is Kids Night Thursdays from 3 to 7 p.m. Youngsters can order free from the chil- dren’s menu with a paid adult meal. The restaurant also of- fers daily special dinners for $6.99. Mondays through Fridays the entrée for each day is, respectively, meat loaf, Swiss steak, Po’ Folk (breaded chicken breast), spaghetti, and fish (beer- battered cod) & chips. Weekends are for Chef’s Choice, and the regular menu is always available, including steaks, chops, sal- ads and sandwiches. And Fridays also offer all-you-can-eat soup. One of each of seven varieties is available every Friday, rang- ing from chicken noodle to vegetable beef to split pea. Becoming well-known is the Cowboy Up. It consists of three large pancakes, two eggs, two bacon slices, two sausage links, hash browns, and biscuits and gravy. The price: $7.59. Customers are advised that if they can’t finish the meal, they’re liable to get their names on a Cow- girl list posted on wall. It’s all part of the joking and friendliness. There also are $3.99 breakfast specials. Another popular item is the Selma Skillet. It consists of two eggs, and country potatoes mixed with onions, bell peppers, bacon and sau- sage. It’s covered in cheese, then smothered in sausage gravy. And you get toast, or biscuits and gravy. It’s obvious that the Kinseys enjoy working to- gether. They like to point out that they originally moved to Selma to retire and build their house. Now the house is “on hold,” but they like the work at their restaurant. When customers ask when they’re going to take a break from the restaurant, they reply (with smiles and somewhat seriously): “We don’t need a vacation -- this is our vacation!” Flags lowered in honor of Lance Cpl. Derek W. Jones All flags at Oregon pub- lic institutions were flown at half-staff on Friday, Oct. 20 in memory of U.S. Marine Corps Lance Cpl. Derek W. Jones. Jones, 21, died on Oct. 8 while conducting combat operations in Al Anbar Province, Iraq. Jones grew up in Salem, Ore. and was assigned to the 2nd Battal- ion, 3rd Marine Regiment, 3rd Marine Division, III Marine Expeditionary Force in Kaneohe Bay, Hawaii. “Oregonians will long remember Lance Cpl. Jones for his dedication to this state and our country,” said Gov. Kulongoski. Request made to make four-way stop at River/Old Stage The city of Cave Junc- tion wants to make the inter- section of E. River Street and N. Old Stage Road a four-way stop. Mayor Tony Paulson has written the Josephine County Board of Commis- sioners asking for authoriza- tion. The intent is to reduce the speed of vehicles on the busy street. Paulson said that public safety is the issue, and the city would install the signs. Among those who will help with the memorial for Spiva, who died Oct. 16, are (above) Louise and Bill Gettle, whose busi- ness, The Flying Machine, is located in their hangar at the airport. They also are go- ing to help prepare a large aircraft radial engine that has been donated.
