H ire six bananus and mix w ith them half a cup of stab; cuke crumbs. Thicken a pint o f light cream with a heaping tablespoon of arrow root. Hweetea it to taste, ndd a little vanilla flavoring, slightly cool it, then mix with th e fru it and crum bs and turn into a b u ttered b aking dish. Bake 20 m inutes and serve w ith cream, hot or cold. • • • V egetable Bonp. One hnlf chopped carrot, one h alf cup chopped turnip, thr««- fo u rth s cup chopped celery, 2 cups cat potato, one h alf cup chopped onion, 3 p ints boiling water, one hnlf enp o f b u tte r or snlistb tu te, 2 tablespoons finely chopped parsley. Halt an d pepper to taste. Wash and peel vegetables and chop coarsely or cut in small pieces; tho la tte r is the b e tte r method for p o ta toes and celery. M easure vegetables a fte r cu ttin g . Mix earro t, tu rn ip , eel ery and onion, and eook in b u tte r 10 m inutes or u n til b u tte r is absorbed and vegetables are tu rn in g yellow. Add potatoes and w ater an d cook an hour or more; the vegetables should be q uite soft. A dd salt, pepper and parsley. Hervc boiling hot. • • • Braised K nuckle of Veal. Wipe knuckle of veal w ith a clean, dump cloth. Crack bone so th a t Muck p art will not be broken and so th a t thin p art will he broken several times. Brown tbiclj p art in beef drippings or an y fa t desired. I’lace one cup of sliced onion, one h alf cup diced celery and one cup carro t cubes in a baking dish. Place browned meat in the veg etables. B ust w ith sa lt aud pepper. Add one and one h alf cups w ater, cov e r closely and cook slowly two or th ree hours.
