For a good quickie, fill large
cabbage leaves with your favorite
meat-loaf mixture, skewer with
toothpick and bake until tender. A
good emergency dish!
When you have more time, try
Danish cabbage. For 4 portions
•lowly saute 1H t diced onions in
8 tbsp, bacon fat until yellow. Add
4 ox. fried beef, cut ia pieces; saute

until browned. Add H t. diced green
pepper and 4 e. coarsely shredded
cabbage; ««ute 10 min. longer, stir­
ring frequently. Add 3 tbsp, chill
sauce; mix well. Should be served
immediately, good and hot.
Smothered Cabbage
Smothered cabbage goes well
with chops, steaks or good old hnm-
burgers. Wash medium head of
cabbage well, removing outer leave*
if too tough or damaged. Cut cross­
wise in slices ene inch thick. I’laea
dices in heavy skillet; sprinkle gen­
erously with cooking oil, and lightly
with soy sauce. Cover skillet tightly;
steam over low beet for 12 to IS
min, depending on age of cabbage.
For a change from broccoli pre­
pared the usual way, try a broccoli
souffle. To serve 6, cream well 4
tbsp, table fat and 3 tbsp, flour.
Add la tsp. salt and H tsp. pepper.
Scald ene e. milk; add gradually to
butter mixture stirring to prevent
lumps. Cook in double boiler until
mixture thickens. Beat 2 egg yolk*
until thick. Cool white saruce «light­
ly, then stir in egg yolks. Add 2 tsp.
phosphate-type baking powder; mix
well. Add one e. finely chopped
cooked broccoli, and lastly fold in
2 egg whites stiffly beaten. Pour
into greased casserole (8 inch di­
ameter) and place in pan of hot
water. Bake at 350 F. for 80 min.
