Thin year the legion of home fanners
will be far larger than ever before. And
with the fanning season just ahead,
it ’s none too soon to start planning
now for this food conservation event.
Plan Your Canning Budget
O f course, the amount of home canning
you do will depend upon the size of
your family. I t is just as wasteful to
esn too much as it is to pass up the can­
ning season altogether. A fair allow­
ance for the average person is 100
quarts of canned fruits and vegetables
a year. This figure includes both home
and commercially canned foods. Divide
that 100 quarts in thirds, one-third for
fruits and berries, one-third for toma­
toes and tomato juice, and one third
for vegetables with a large portion in
leafy and green vegetables, and you
have a rough estimate of your fam ily’s
needs for the year.
T his allowance doesn’t include
jellies, pickles, relishes and those
extras th a t pep up the menu the
year around.
Assemble a ll yo u r jars th a t can

take the standard size self-seal­
ing lids. Check the mouths o f the
jars and discard a ll those w ith
chips, cracks, or flaws, fo r such
defects make perfect sealing im ­
possible. I f you’ve h a lf gallon
jars, plan to use them fo r toma­
toes and fru its . They are too
large fo r the proper perietration
of heat fo r o th e r foods.
Be sure there’s enough storage
space fo r yo u r canned goods be­
fore you plan t.oo much canning,
fo r if you haven't a place to keep
them, don’t can foods w ill spoil!
They should to stored in a dark,
cool place. It is not wise to keep
them in the kitchen because of
the heat from cooking.
