Where Do You Read the Voice?

an old term used by loggers to describe
where they would sit to eat their lunch
– on a log with their caulk boots or
climbing spikes dug into the wood to
hold them in place. “Mike is just a wealth
of knowledge and information about old
time logging and about the industry,”
says Lindsay.
All the food is smoked by Rudick
on a Green Mountain Grill. Lindsay says
she gets her wings from a special vendor
and they are always fresh, not frozen.
They’re also huge and are served with
either blu cheese or ranch dressing. A
fixings bar for the sausage dogs includes
sauerkraut, chopped onions and relish,
and several mustards and other sauces.
Every order comes with a bag of chips
this town didn’t have, and we were
looking for a niche we could fill,” says
Lindsay about her menu.
“People
love different flavors of wings, and we
saw a hot dog stand in Levenworth,
Washington, where people are always
standing in line. We’re smoking up our
food in the mornings and then it’s quick
and fast for our customers.”
The property where Spike
Table is located was purchased by Mike
Pihl in November, owner of Mike Pihl
Logging, who has named the corner lot
“Pihl’s Landing.” The siding for the
food hut is pine that was planted by
Pihl’s grandfather in 1923 and harvested
10 years ago. The Spike Table name was
suggested by Pihl, who told Lindsay it’s

“Don and his
wife Holly, and I came
up with this idea to
open something like
this and to make it all
about loggers,” says
Lindsay. “That obvi-
ously appealed to Mike
and it helps bring local
history back to Verno-
nia. Mike will be bring-
ing in more memora-
bilia and we plan to tag
things so people can
read and learn about them. We also want
the food to be tasty with big servings – in
other words, logger food.”
Lindsay says she sees her food
operation as a way to help build, and
add to, the local economy. “We’re
not Levenworth or Sisters, but we
can strive to be like them,” she says.
“Having a place people want to visit
starts with good food options and I feel
like we’ve added to that. We already
get bicyclists and motorcyclists com-
ing here. This is another place with
outdoor seating where you can walk
up and get your food quickly.”
Linsday moved to Vernonia in
2005. She previously worked at R&S
Market where she was known for her
friendly personality and her ability to
sell you more produce than you intended
to buy when you walked in. She
currently works at True Value Hardware
while running Spike Table on the
weekends. She says she and the Rudicks
are planning a trip to Tennessee this fall
to look for more ideas for smoked foods
and sauces to add to their repertoire.
Lindsay says she plans to add
beer and wine in the spring and maybe
a covered seating area. T-shirts will also
be available. She says she will have a CB
radio on site so truck drivers can radio in
their order ahead and pick it up on their
way through town. She says she hopes
to expand to more days of the week next
spring and summer, especially when she
has beer and wine and can encourage
people to hang around the fire pit.
