Broccoli Salad
2 cups frozen peas
1 pound fresh caulifl ower
1 pound fresh broccoli
4 strips bacon chopped
½ cup mayonnaise
½ cup plain yogurt or
sour cream
½ tablespoon sugar
4 ounces cubed cheddar
cheese
½ teaspoon salt
Cut broccoli and cauli-
fl ower, including stems,

In a large pot with a wire
mesh lift out strainer, bring
4 quarts of water and 1
tablespoon salt to boiling.
Drop in peas and boil
one minute.
Lift out strainer drain
peas and put aside in bowl.
Add caulifl ower to strainer

Lift out strainer and run
under cold water then set
aside. Repeat process with
broccoli boiling for two
minutes using the same
boiling water.
In small fry pan cook
bacon till lightly crisp
drain on paper towel and
cool.
Mix mayo, yogurt or
sour cream, sugar and salt
together to make dressing.
When vegetables are
cooled add to dressing
along with cheese and ba-
con, toss lightly to mix.
Refrigerate for at least
an hour to one day before
eating.
If you want to make this
a little heartier for a meal
in itself just add a cup or
so of ham or smoked tur-
key cubes and eat up.
Just remember moving
