J. M. Stone & Sons Making
Additions and Changes
A new spur is being built from
the main track line of the S. P.
line at Monmouth to the flour
mill recently purchased by Mr.
J. M. Stone c Sons from George
Stone, a party by the same name
but of no relation. It is Mr.
Stone's plan to hereafter receive
grain and grade it into three
grades, running it by grade into
bins at the mill to hold the diff
erent, grades of grain. By this
plan Mr. Stone states he can then
have the prrain of the farmers
ready for shipment at any time
they may desire, direct to th
market at Portland, for sale, ari'
it will be already graded for
sale. To do this he will crib the
present ware house, putting in
machinery for handling the grain
and making three bins out of the
warehouse. In addition h; plans

Page's belief that ignorance on
the subject of repair and main
tenance of roads is as much the
cause of their bad condition as
any other one factor. It is ex
pected that the competition will
bring about a better understand
ing of the subject of repair and
maintenance in the rural districts

ral districts have experienced the
disadvantages of road.i made im
passable through a lack of proper
maintenance and it is expected
that their interest in the compe
tition will stimulate greater in

written at the top of the first
page. The announcement of the
competition has been sent to the
superintendents of schools in the
rural districts. No further in
formation can bo obtained from
the Office of Public Roada. Thi
announcement should be plain to
everyone, and all children wil
thus start on a basis of equality

One secret of successful pot roasting
lies In not Retting too much water In
the pot. The ment must be turned of
ten In order that It may brown all over.

Southern I'ot Hoaxt-Tnke any kind
of meat you prefer. Use a larce enam
eled saucepan or an Iron pot In which
to cook It. Plnoe In tbe vessel a table
poonful of butter; let It brown; wash
off the roast and put it Into tbe pot
After It begins to fry pour in enoush
water to half cover tbe meat, season
with salt aud pepper, cover and atew
loiy.
A half hour before serving add either
Irish or sweet potatoes or turnlpa and
let them browu with tbe meat
A French Recipa.
Parisian Po noast.-Fry three or
four onions in a little bacon In the ves
sel In which you are to cook the roast
When tender lay In the meat and let It
brown well.
Holl the meat round and round and
tie in place with a piece of cotton cloth
in order to keep it In shape for allcltiK.
Have ready a bunch of carrots scraped
and sliced, a turnip sliced and peeled,
a little chopped parsley and a cupful
of totnnto sauce.
When the nient has browned on both
sides put In the vegetables and cover
with hot water, not allowing It to come
almve the level of tbe meat. When It
beirins to simmer season with salt and
pepper and cook slowly for two hours,
turning the meat once.
Put the mention the platter and set
in the oven to keep warm. Then with
skimmer remove the vegetables, ar
ranging them In a circle about the
meat Thicken the gravy remaining,
fiour It over tbo vegetables or serve
separately.
Flavored With Carrots.
Vegetable Pot Roast. Take about
three pounds of rump beef, season with
salt,jepper and a sprinkle of cayenne,
Heat some finely cut beef suet In
snucepan and brown the meat all over,
turning It frequently. Add half a cup
ful of boiling water and a whole onion
and cook slowly for an hour.
Peel and slice some carrots. Just cov
er with boiling water, add a tesapoon-
ful of sugar, boil for half an hour.
drain and add to the meat along with
some finely cut turnips, potatoes, toma
toes or any vegetable you like. Cover
and cook slowly for another hour.
Arrange the meat in the middle of
dish, the vegetables around It and
pour over It a jrravy made by adding
some hot wuter and thickening it wtOi
browned
COLD CHICKEN DAINTIES.

Chicken l'ritters.-Cut up cold roast
ed or boiled chicken iu small pieces.
Season with BiiJt, pepper and a piece
of fresh lemon. Let tbe meat stand

spoonfuls into boiling fat and fry un
til a light brown. Drain and serve.
A Fine Hash.
Chicken Hash. Cut the chicken from
the bones aud divide It Into small neat
ileces. Heat the gravy left over, di
luting it with hot wuter or with weak
stock If tbe supply is too smnll. Sea
son with salt. popH?r, Worcestershire
siiiii d or ketchup nnd put the meat Into
the gravy when this Is boiling hot
When tbe meat has simmered in It for
ten minutes add a tublespoouful of
cranberry or currunt Jelly, thicken
with a little browned flour and serve
either on toast or fried bread, with tri
angles of this arranged around tbe
edge of the dish.
A Dainty Meat Loaf.
Chicken Loaf. Take cold boiled
chicken and sepnmte the meat from
the bones Take off all skiu and cut
into thin slices, mixing tbe light and
dark parts together Season with salt
ami pepper Take the cold broth In
which tbe chicken wng boiled, heat it
po;;r It on tbe meat and mix well
Shape ii-.is like a loaf of bread, wrap
It in a clctb and press with a heavy
weight for a few hour. When served
cut in thin slices
Highly Seasoned Croquettea.
Chicken Croquettea. Take one pint
of finely chopped cooked chicken, one

tle cold water and add to the gravy.

buttered deep earthen dish with sliced
tart apples, pour the batter over the

Apples Kn Casserole Cut the apples
In quarters, ttieu put In a buttered
cusserule dish and cook until you can
pierce tbeui Take out and sprinkle
sugar over them. This will melt and
run through the hot apples
Delectable Concoctions.
Baked Apple Pudding -Take one
cupful of sugar and cream it with one
quarter cupful of butter. Add one
beaten egg. one half cupful of milk and
one and one half cupfuls of flour mixed
and sifted with tv?o teiispoonfuls of
bal.ing powder. Half All a buttered
deep earthen dinh with sliced tart ap
ples, pour (lie batter over the top and
bake mi hour. Serve with hard sauce.
An Apple Medley. - Wash and ore

peeled dip each apple into oue half cup
