PRECOOLING MEANS
One of the greatest discoveries con
nected with the marketing of fresh
fruit in the prooos of prccooliug.
Fruit to be marketable should bo
gathered in as ripe a condition a
possible, considering tho distance, it i
to bo shipped and tho limn it ih to
ho kept, Now, under ordinary con
ditions, very much of our choicest
fruit would have to bo gathered so
green that its most attractive quali
ties would be lucking; but where this
fruit i submitted to tho promoting
process it will keep in a much ripor
condition long enough to bo got to
market and diHised of. Our fruits
are gathered in tho hottest season
this is tho ripening season and it re
quires heat to ripen and bring out
the best qualities of the fruit. When
picked during the hottest part of tho
lot test days, fruit is heated through
out, and when packed in that coudi
tion it remain so lor .10 to 48 hours
after picking. It will be understood
that heat is the prime lactor in tho
proces of ripening, and that the
proces of ripening is the process of
ileeav. When mm nceomcs inorougn-
ly ripo decomposition soon begins,
and the latent heat in tho fruit as it
comes from the orchard hastens this
process. Now, what is known as the
prccooling process check this decay
i' reducing tho heat. Tho trtut.
when it conic from tho orchard, is
immediately submitted to u refriger
ating oeess by which the tempera-
turo i reduced to as near 50 degrees
as possible, nud when it has reached
the lowest teinperaturo obtainable by
the method applied it is at once Iran
ferrod to the refrigerator cars and
the temperature kept down as low
as possible until it reaches market.
I!y thi means, unless there is great
delay on the road, fruit will keep in
fresh condition, for a long time 'and
reach the market in as goo shape as
it leave the orchard. When fruit is
picked and packed without precool
ing and then placed in the rofrigorn
tor cars, it requires 48 hours to ro
duee the teinperaturo to that of the
car, or to cool it through. When this
work i done before packing the life
of tho fruit is increased by that much
48 hours so that the process is
equivalent to bringing our markets
two days nearer, and thi is n good
deal in the case of tender fruits.
