Benchmark prices are steady. Asking prices for next week are 5 cents higher for Jumbo and
Extra Large, 3 cents higher for Large and unchanged for Medium and Small. The undertone
is fi rm. Demand is moderate to good into loose and cartoned egg channels while warehouse
buyers are generally content to wait and monitor current market conditions before purchasing
additional shell eggs. Off erings and supplies are light to moderate. Market activity is moderate
to active. Small benchmark price $1.53.
CALIFORNIA:
Shell egg marketer’s benchmark price for negotiated egg sales of USDA Grade AA and Grade
AA in cartons, cents per dozen. This price does not refl ect discounts or other contract terms.

Receipts: 350 HD
Comments: Monday’s regular cattle sale
featured over 350 head of cattle, with a mix of
cull cows and bulls, feeders, and bred cows.
Slaughter cows were steady to higher, with the
best of the cows bringing up to 69 cents per
pound, and averaging 54-57 cents. Slaughter
bulls were steady, topping out at 76 cents, with
an average of 69-74. A lighter run of feeders
didn’t provide market test, though lighter
steers weighing 400-500 pounds brought up
to $1.60, with an average of $1.46. Bred cows
topped out at $1100 a head, with most broken
and solid mouth cows selling by the pound.
Cow calf pairs topped out at $1400. Next Dec.
13 is our last feeder sale of the year, and our last
sale of 2021 will be Dec. 20.

inspection for the week totaled 40,000
compared with 40,000 last week and 37,000
last year.

Fluid Milk and Cream — Western U.S.
Dec. 9
California milk production is unchanged
this week. Bottling demand is steady to
higher as contacts note strong retail de-
mand. Class II demand is declining as some
producers prepare for lighter year-end
production schedules.
Farm level milk production is picking up
in Arizona. Milk inventories are available to
meet production demand. Class I demand
is unchanged. Demand for Class II and III
milk is strong in the state.
Despite cooler weather, farm level milk
production is steady in New Mexico. Class
I demand is trending higher, while Class
II demand is flat. Staffing shortages and
delayed deliveries of production supplies
are, reportedly, causing some Southwest-
ern processing plants to run shortened
schedules. Contacts report a few missed
orders recently at Southwestern cheese
plants, however, balancing plants have
been able to absorb those milk loads.
Pacific Northwest milk production has
declined this week. Contacts report that
heavy rain and flooding in some areas
has decreased cow comfort, contributing
to reduced farm level milk production.
In recent weeks, similar weather has
been reported in Canada, causing some
stakeholders to send milk north to meet
market demands. Demand for milk across
all classes is steady.
Milk production in the mountain states
of Idaho, Utah and Colorado is steady to
higher. Contacts report increased spot
availability of milk in Idaho. Class I demand
is strong. Condensed skim contracts are
steady in the West. Strong demand for
cream is present. Cream is available to
meet current market demands, contacts
say that some purchasers in other regions
are looking to the West for loads to meet
strong year-end holiday demand.

Compared to last week, steers and
heifers sold steady to 3.00 higher. Some
backgrounders have been more than
willing to take on calves right now as the
temperatures typically moderate during
December and farmer/feeders have put
the combines away for the year, so they
have more time to dedicate to the cattle
operation.
In addition, cattle feeders have some
confidence with where the futures for fed
cattle are and the demand at auctions
is reported to be from moderate to very
good.
Ranchers seem to be more willing to
chase the market up some just to get
cattle bought that they like. Large receipts
again this week as many auctions will not
host a sale during the two-week period of
Christmas and New Year’s.
The CME Cattle Complex has not kept
pace with the cash fed cattle as we moved
into another delivery month. Negotiated
live trading of fed cattle in the Southern
Plains sold 2.00 lower from the previous
week at 140.00, while dressed sales in
Nebraska sold steady at 220.00.
For the week, nearby December Live
Cattle was 0.825 lower, and the February
contract was 0.875 lower. January Feeder
Cattle contract was 0.750 higher for the
week, while March contract was 1.80
lower.
Packers are no doubt looking ahead
to the two weeks of holiday shortened
slaughter of Christmas and New Year’s
and were not willing to take on any more
live inventory than necessary to fill beef
contracts.
Cutout prices continue to be under
pressure due to some excess beef in the
pipeline. The larger harvest in recent
weeks and some consumers shying away
from the higher prices at the grocery
store, even though the Choice cutout val-
ue has slipped to the lowest value since
early April 2021.
Choice boxed beef closed the week 9.82
lower at 264.54, while Select was 6.40
lower at 252.24 for the same period.
Weekly Cattle Slaughter under federal
inspection estimated at 668K for the
week, 8K less than last week, and 4K more
than a year ago. Auction volume this week
included 46 percent weighing over 600 lbs
and 40 percent heifers.
