Taste buds change over
time, however, which gets to
the topic of a creamy holiday
soup made from golden chan-
terelle mushrooms. Chan-
terelles are not found in the
Blue Mountains, but are
common in the Cascade and
Coast ranges of Oregon and
Washington. Over the past
fall season, family members
from the west side gathered
enough of these tasty treats to
share.
Preparing mushroom
soup requires some atten-
tion to detail. One recipe
calls for a quart and a half
of chicken broth, two table-
spoons of melted butter, three
cloves of minced garlic, and
a cup of sliced shallots for
every pound of cleaned and
trimmed chanterelles. Add
fl our to thicken, a splash of
white wine if it makes your
heart sing, and let the mix-
ture simmer for 30 minutes.
Transfer to a blender and run
the gears slowly to smooth
the mixture. Pour the soup
back into a heated saucepan
for serving. Brown leftover
mushroom trimmings in a fry
pan and sprinkle them atop
warm bowls of soup for a
more robust fl avor. The result
is a savory beginning to any
holiday feast.
Every fall I drift red hackle
fl ies for mountain whitefi sh
when they school up near
fall chinook salmon redds to
gobble up loose eggs. White-
fi sh put a nice bend in your
rod when hooked on light
tackle and smoke up “mighty
fi ne.” By late November,
females or “hens” burst with
large roe sacs that need not go
to waste.
To make golden caviar,
carefully remove the bright
orangish roe from the fi sh
body cavity and cut into
2-inch or so chunks. Indi-
vidual eggs are small, on the
order of 1/8-inch in diam-
eter. Place in a mixture of
one-half cup Kosher salt to
one quart of ice-cold water,
taste test after fi ve minutes
for saltiness, and place brined
eggs in a fi ne-mesh strainer
to remove excess salt and any
attached membrane. Rinse
eggs well with cold water,
place in a small glass jar, and
seal. Voila, you now have
caviar that can be stored in
the refrigerator for one to two
weeks with little loss of fl avor.

pretty to eat. Serve with a
selection of gourmet crackers
and crème fraiche. I like
to think of this appetizer
as a blessing from Mother
Whitefi sh.
While it’s possible these
culinary treats won’t displace
sweet potato-and-marsh-
mallow delight on what
we kids used to call “the
grown-up table,” odds are
good their presence on the
hors d’oeuvre tray will cajole
taste buds. What’s more likely
is holiday conversation will
be diverted from the sad state
of the world to an entertaining
fi shing or hunting story.
