Frosting

1 tablespoon granulated gelatin
4 tablespoons cold water
3 tablespons butter
4 tablespoons flour
2 cups milk
3 egg yolks
1 teaspoon vanilla
i teaspoon salt
H teaspoon lemon extract
3 egg whites
1 cup peaches
1 cup diced pineapple
2-3 cup vinegar
Sonk gelatine and cold water for
5 minutes. Dissolve over pan of hot
water. Cool. Melt buttr and add
flour and add milk and cook until
creamy sauce forms. Add egg yolks
and beat 2 minutes. Add rest of In
gredients and pour Into glass mold
which has been lined with lady fin
gers. Chill 24 hours. Turn out on
platter and surround with whipped
cream.
Tempting Tea Cukes
cup butter
1 cup sugar
2 eggs
J teaspoon lemon extract
li teaspoon vanilla.
',i teaspoon salt
2-3 cup milk.
2 cups flour
3 teaspoons baking powder
cup candled orange peel
Cream butter until soft. Add Bugar
and mix until very creamy. Add rest
of ingredients and beat 3 minutes.
Half fill greased muffin panr. Bake
15 minutes in moderate oven. Cooi
and frost.
Dainty Frosting
2 egg whites, stiffly beaten
2 tablespoons orange juice
i teaspoon salt
1 teaspoon lemon extract
1 1-3 cups sifted confectioner's
sugar
Beat egg whites until very stiff.
Add rest of ingredients. Mix well.
Carefully frost the tops and sides of
cake.
If desired the tops of the frosted
cakes may be decorated with bits of
candies, orange peel and pecans.

It has been noted within the last
two or three weeks that individuals,
groups and organisations who are
closely In touch with the general
business situation of the country
have expressed themselves In terms of
optimism. To say the least, there
has come recently quite a change in
feeling regarding the business out
look. It is to be hoped that this feeling
of conservative optimism will stead
ily spread throughout the country be
cause a more confident attitude upon
the part of everyone will prove a
helpful Influence In bringing condi
tions back to normal.
One of the encouraging factors In
the present situation 1b that deposits
In savings banks have bean constant
ly growing. This means great poten
tial prosperity. Regardless of what
may be said otherwise, the prosperity
of a nation really must depend upon
the thrlf of the people. An orgy of
Ill-advised spending might bring great
activity and apparent prosperity lor a
while but It would only be a flash in
the pan. It would soon come to an
abrupt end. Whereas a nation whose
citizens are constantly getting ahead
and putting something away for
emergencies Is bound to enjoy pros
perous conditions.. There always will,
of course, be periods of temporary de
pression such as we have been pass
ing through during the last few
months but the sunshine of prosper
ity can always be depended on when
people are thrifty.
