mince pie Is not a HUltahle dessert
for children and that it should fol
low a light meal rather than u
hearty one.
Ml noo meat improves If allowed
to stand one or two weeks before
making Into pies. Tho flavors blend
as in any spiced concoction and the
result Is an enticing mixture with
out any predominating flavor.
"Proper" mlnco meat is made
with boiled cider and there are
several brands of commercially
prepared boiled cider on the mar
ket. However, sweet spiced vine
gar from sweet pickles or u mix
lure of grape juice, orange juice
and lemon juice can be substituted
with good results. Sweet cider
can be boiled with tho other in
gredients If It Is at hand.
Two pounds lean beef. 3-1 pound
beef Buet, 4 pounds chopped ap
ples, 3 pounds seeded raisins, t
pound cleaned currants, 1 pound
shredded citron, 1-4 pound candied
orange peel. 1-4 pound candled
lemon peel, 3 pounds light brown
sugar. J quarts sweet cider, t cup
molasses. 1 cup stock, 2 teaspoons
salt, 1 nutmeg (grated), 1 table
spoon ground cinnamon, 1 teas
poon ground allspice, cup pre
served cherries or strawberries.
Any part of the beef can be used
that is clear lean meat. It must
be boiled until very tender and per
fectly free from nny suggestion of
gristle, fat or bone.
, Cook meat In boiling water to
cover until tender, udding 1 1 - J
teaspoons salt when about half
done. Add water as necessary and
re-scu m as it rises. W hen meat
is lender, boil rapidly to reduce
stock to one cup. Let cool In stock.
When cool remove from stock and

bont or gristle. Put meat through
food chopper. Strain stock, Mlnct

chop raisins, i'ut all Ingredients
except preserves Into preserving
kettle. Mring to the bulling point
and cook over a low fire about two
hours, stirring to prevent sticking.
Add preserves and bring to boiliuH
point. Tour tutu sterilized jars ami

If cooking sherry Is added, omit
