Enjoyable Meeting
Yesterday Mrs. Orson Ilrundt de-

of her luncheon club at a pot luck
luncheon In her home at the
Lnndis Court apartments.
Kali flowers graced the table
with covers for ten. Pleasant social
hours were spent together during
the afternoon.

H. Kllzgerald of Sulcm, who is vis

the home. A dainty two
course luncheon was served.

Quick work and little stirring pre
vent the escape and loss of carbon
dioxide gas before the mixture
begins to bake.
Corn meal muffins will be ap
preciated this time of year If serv
ed at any meal from breakfast to
dinner. Any that are left over
can be split and toasted for after
noon tea.
Corn i neal Muffins
Two cups flour. eup corn
meal. 4 teaspoons baking powder,
3 tablespoons sugar, ', . teaspoon
salt, 2 tablespoons melted short
ening, 1 egg, l cup milk.
Mix ami sift flour, salt, sugar
and baking powder. Add cornmeal
and mix. Heat egg until light and
add milk and shortening. Add Hip
:iid Ingredients to dry mixture and
stir hard to mix. Kill oiled muffin
tins about two-thirds full and
bake 20 minutes in a hot oven.

Very often some form of "quick"
bread adds the finishing touch to
an otherwise plain meal. I taking
powder biscuits and honey, muffins
ami marmalade, cornmeal sticks
and soup., brown bread and cottage
(lieesi!--ihese combinations and in
numerable others are. engaging and
nourishing.
The chemical action back of the
"quick" biscuit or muffin mixture is
interesting und worth the cook's
consideration.
There are three general types of
baking powders on the market, but
they all liberate approxlmiitety the
same amount of carbon dioxide gas.
Their main difference lies In their
action in the dough before It Is
heated. The various powders differ
also in their residue In the baked
product. These compounds ap
parently have little effect on the
other Ingredients of the dough.
It's Not a Stimulate
Carbon dioxide gas is a leavening
agent which is produced by the
chemical action of an acid on so
dium bicarbonate. The sodium bi
carbonate or baking soda will not
give off Its gas until combined with
the acid, so all baking powders
mast contain an acid and baking
soda. A starch filler is added to
keep these Ingredients dry and In
ert. . When baking soda, is used with
sour 'milk', there 'Is 'tlie. "colriblna'
lion of sodium bicarbonate and
acid which produces carbon diox
ide gas.
An emergency substitute can be
made for baking powder by rising
