I granulated gelatin, 1-3 cup cold
water, 2 eggs, cup sugar, tea
spoon salt, 2 cups milk, 1 cup
whipping cream, 1 tenspoon vanilla.
Soften gelatin in cold water' for
five minutes. Iteat yolks of eggs
with sugar and slowly add milk
which has been heated over water,
neat eonstrtnlly while adding milk
and bo sure sugor Is dissolved. Add
salt and softened gelatin und cook
over hot water until mixture
thickens: It will take about 15
minutes. Htir constantly. Uemove
from heat and beat two to three
tuinutes. Let cool and fold in
whites of eggs ben ten until stiff

until firm. Turn Into a mold and
let btnnd to chill for four or five
hours. The pudding will be cold
and firm in two or t h ree h o u rs,
hut improves if allowed to stand
four hours or longer.
The recipe will serve eight persons.
