Drain and chop, reserving juice
to use in sauce. It roil bacon un
til crisp. I'se 1 tablespoon bacon
fat, add sliced mushrooms ami
cook over a tow fire for tt-n min
utes. Stir iu flour, slowly add
milk and spinach juice and cook
until mixture boils. Season with
sail, pepper and paprika. Arrange
spinach in center of deep platter,
surround with bacon and pour the
sauce over spinach, (iai'nisb with
slices of hard -conked eggs.
Make very hot in the oven be
fore garnishing with eggs.
