nourishing, quickly eaten and
easily digested. If a child eats
his 'luncheon In haste with - the
fear of "tardiness' in his mind his
food will do him less good than
if he Is served a simpler meal thnt
he can enjoy In peace.
Baked Spinach and Tomatoes
.Two pounds spinach, 4 tomatoes,
M onion (mlnced, 1 teaspoon
ingar, H teaspoon salt, few grains
pepper, y, cup fine dried bread
crumbs, 4 tablespoons butter, 4
tablespoons buttered crumbs, 2
tablespoons grated cheese. ;
Wash spinach and cook In Its
own juice. Chop very fine. Peel
tomatoes and cut In slices. Put
,i layer of dried crumbs Into a
well-buttered baking dish. Cover
with a layer of tomatoes, sprinkle
with onion, salt, pepper and sugar
ind dot with butter. Add ft lay
er of spinach. Begin with dried
;rumbs and again continue layer
or layer with seasoning until all
:s used. Cover with buttered
irumbs. sprinkle with cheese and
bake 25 minutes In a modirntdy
hot oven. Serve from the dish In
which It was baked.

This pie leaves little to be de
sired and is, indeed, a worthy re- 1
prcsentatlve .of the lemon pie
family.
Cream one tablespoonful of but
ter with one-half cupful of sugar
and add the yolk of one egg. Beat
all well together and whip In the
grated rind and Juice of one lem
on. Place In an enameled wttre
saucepan, which Is not affected by
citrus acid and will therefore pre
serve the delicate color of the mix
ture. Scald all but two tableapoon-
fuls of-a cupful of milk.
Blend one tablespoonful of corn
starch with the cold milk and add
to the scalded milk, stirring until
thickened. Then add to the lemon
mixture and fold In the - stlffy
beaten white of the egg. Cool
slightly and pour Into a pastry
lined pan. Bake In a moderate
oven until the filling is firm In the
center; If necessary cover the pie
with a piece of brown paper dur
ing the-baking as It Is very liable
to brown almost too quickly.
