about five hours' refrigeration.

little cooking.
Melt one quarter of a pound of
sweet chocolate in an enameled
ware boiler. Add one tablespoon-
f ful sugar und four tea-spoon fu Is
water. Then add three egg yolks
one at a lime, beating well. Cool
und fold In the stiffly beaten egg
whites. Line an enameled ware
pudding dish with waxed paper
und place on it u layer of lady fin
gers. Spread half the chocolate
mixture over this anil then anoth
er layer of lady fingers. Place in
the lc box for at least five hours.
When set, cut Into squares and
serve from the dish In which It Is
molded, with whipped cream.
Sponge cake or macaroons can
be suhstituted for the lady fing
ers, if desired.
