servu and should be utilized if pos

is not really yellow, but a drllrtlte

very attractive preserve rooked ,

kettle with grape leaves, put on
the green gages with enough water
lo keep them from scorching and
cook until soft. Add sugar in the
proportion of one cup of sugar to
each half pint of the plums. He-
move plums carefully with an en

ly in jars, .sealing while very hot.
Peaches are, of course. regu
lar standby. Peaches preserved
whole or rut in half are a very
rommon form of fruit preparation.
Peaches In jam or sweet plcltle are
not as universal. In buying peaches
by, the basket a certain proportion
of the fruit will alwuys be found
which is not sufficiently perfect
for cunning or preserving whole.
Take this fruit, removing the stone,
but not pa ring the peach, rut In
stand over night. In the morning quarters or Mnailer pieces, put in

ing. In enameled ware the cherries
will not be darkened by any action
of the acid on the kettle. Cook the
cherries until thoroughly soft and
then add granulated sugar in the
proportion of one scant cup of sug
ar to one heaping cup of cooked
cherries. Let all cook up again,
coming to a quick boil, and put at
once Into jars. If tbe dark cherries
are used instead of the Morello,
use the same method, but half the
amount of sugar will be sufficient.
Kor cherry jam, stone the cherries
and cook very slowly In an en
ameled w;tre preserving kettle un
til all is a smooth paste. Add sugar
in proportion to half a cup of sug
ar to one cup of tho cooked fruit.
One good thing about jam Is that
different flnvors may be combined.

Raspberry Jam by Itself Is an
old standby, put the raspberries,
well sprinkled wll h granulated
Mignr. In a preserving kettle over
night. Cook slowly tho next day
until the jam is thick. Add flu gar
In the proportion of half a rup to
a rup of berries. If currants are
added to raspberry Jain, Increase
the quantity of sugar used.
Pplred currants make a pry ac
ceptable relish with meat, Stem
and wash the currants and rook
quickly. Let boll up and skim
with an enameled ware skimmer.
Keplace on the stove, ndd sugar in
the proportion of one-fourth of a
cup of augur to my of tho cooked
fruit, add also a tnhlespoonf ul of
whole cloves, n couple of slicks of
broken cinnamon, and n few all
spice, to each quart of the spired
currants. Let alt cook gently fur
fifteen minutes, pour into Jn is
and seal while very hot.

parts, bluckberries and blueberries.
Put the berries Into an enamaled
ware preserving kettle, cover with
sugnr and let stand all night. After
the berries are heutd through on
the stove, so much Juice will eol
lect that It Is well to remove some
of It. Skim carefully, take out
juice, leaving enough to keep the
fruit from scorching. Thin Julep
should be put Into the smallest
enameled ware preserving kettle,
brought to a boil, skimmed care
fully, bolbd again und sugar u'bbd
in the proportion of one cup of

peach. This is presuming that the
peaches are thoroughly ripe and

method for making spiced peaches
quickly is to take the peaches, wipe'

peach. Have ready on the stove In

sugar, one cupful of sugar to each
cupful of vinegar. Put lu the
