- Dutch Potato Soup
Two tablespoons butter, 1 large
onion, 3 ' medium sized potatoes,
i cup diced-celery, 2 cups water,
- cups milk, 2 eggs, I teaspoon
salt, pepper., -
Melt butter in sauce nan, add
onion cut in thing slices and sim
mer for five minutes. . Add pot i-
toes pared and cut In slices, cohy
and water. Cook until potatoes
are soft and the slices are brok
en. The water will be reduced
about one-half. Scald milk and
add to potatoes with salt and pep
per. Bring, to the. boiling point
and add the eggs, stirring vigor
ously. Keheat but do not let boil
after adding eggs. The eggs enn
be broken Into a bowl and very
slightly beaten with a fork be
fore stirring Into the hot soup
but this la not the "Dutch" meth
