Tapioca either boiled or baked
is a favorite dish of children, and
because It Is so nourishing it might
occasionally well serve as the main
dish tor luncheon. Baked 'with
apples and served hot to tho little
tots who hurry home from school
tor lunch on these brisk days, it
will be found appealing to their
healthy appetites.
Pare, core and quarter four tart
apples, place them in a deep enam
eled ware linking dish, the vitreous
-surface of which will not affect or
bo affected by the acid juice of the
annles. Pour half a cup of boiling
water over. .the apples and nuke.

ed ware double boiler and add two
tablctjpooiiruls of tapioca that does
not need soaking, nnd cook until
the tapioca looks clear. Break two
eggs into a bowl, add one and one
half cupfuls sugar, u pinch of salt,

stir Into the cooked tapioca. Pour
this mixture over the apples and
