Here are a few "different" suageslions for tonight's
dinner. Notice how the use of bread crumbs in these
recipes extends a vegetable or a small amount of meat
in a way that will serve several persons deliciously oh
well as offer a variant to the usual preparation.
Filled Cabbage
Scoop out the center of n large, solid head of cab
bage so as to leave the outside leaves intact for refill- ..
. ing. Chop cabbage fine. Soak loaf of stale bread in ;
water and squeeze very dry. Heat two tablespoons of -drippings,
add a large-sized onion chopped fine, then .
add the bread, one pound of chopped beef well minced
and the chopped cabbage , and let it get well heated. '
Take off stove and add two eggs, popper, salt, nutmeg,
a little parsley and a little sage, season very highly, Use ,.
a little more cabbage than bread in the filling Tut this
all back in the cabbage, and cover with the large leaves; ' '
put into small bread-pan and bake for two hours, put:.',
just enough water in to keep the pan fioriv burning; :;
don't baste. It doesn't harm if the loaves scorch.
