IMI'KOVRMRNTS IN THE IlAIliY
MAN'S MKTIIODS.
E. ft. Eastman, editor of the Pairy
man's league News, has some encour
aging things to say of the improve
nient in dairying methods and the in
crease In milk production. Also h
thinks that the public does not accord
to dairymen generally cither tho credit
or the understanding they deserve.
Fifty years ago the average produc
tion of milk per cow was about 25U0
pounds. Now that overage is about
fillOO pounds, just double. Much of
this advance has been made in the Inst
few years.
Of course, the immediate immiry to
why, if there is twice as much milk, it
should cost twico ns much to the con
sumer, and the mind immediately
plnccs the dairy man In the ranks of
greedy profiteers. Hut it should be
remembered that all this increase in
milk production has been mndo only
by a steadily incrcasod investment on
tho part of the duiryman. Every
ounce of milk costs something, and one
investigating commission denied to
farmers near one of tho great cities n
price for milk sufficient to net them
25 cents an hour after deducing their
expenses.
Tho solution is for tho dairyman to
go on Improving stock anil methoiln
until every cow is n gooil cow, anil for
the public to concern itself with lm
proving roads nnd transportation fa
cilltics so that milk supplies now far
removed from consuming centers may
bo quick and cheaply 'brought tyhero
there is n demand for thorn. Mutual
benefit will be tho result. Good rulci
work both way.
