! foods, is a low priced material and
j may be used as the basis for many
!appetizing dishes. The white and yel
j low meals differ somewhat in flavor
: but are much alike in composition,
' there being no difference in food
j values. The following excellent reci
. pes are offered by Laura J. Cheney of
0. A. C.
j Corn Meal Puffs
j 1 quart milk, 2-3 cupfuls corn
j meal, 1-4 cupfuls sugar, 1 teaspoon
i ful salt, 8 eggs, grated nutmeg. Cook
i the milk and meal together 15 min
uses with the salt and sugar. When
cool add the egg well .beaten. Bake
in cups. Serve with stewed fruit or
jam.
Sour Milk Corn Bread
2 cupfuls corn meal, 2 cupfuls sour
spoonfuls brown sugar, 1 1-4 tea
spoonfuls salt, 2 eggs, 1 teaspoonful
soda, 1 tablespoonful cold water. Cook
the meal, milk, salt, butter and sugar
in a double boiler for about ten min
utes. When the mixture is cool, add
the eggs well beaten and the soda dis
solved in the water. Bake in a shal
low iron or granite pan for about 30
minutes.
( Buttermilk Waffles.
3 cupfuls water, 2 cupfuls corn
meal, 2 cupfuls wheat flour, 1 cup
ful sweet milk, 4 eggs, 2 tablespoon
fuls fat, 2 teaspoonfuls salt, 1 1-2 tea
spoonfuls soda. Buttermilk or sour
milk enough to make a thin batter.
Cook the meal, water, salt and fat to
gether in a double boiler for 10 min
utes. When the mush is cool add the
well beaten eggs. Sift the flour and
soda together, add the flour and the
sweet milk alternately to the corn
mixture, finally add the buttermilk
and beat thoroughly. This mixture is
- ' improved by standing a short time.
Corn Meal runs.
1 quart milk, 2-3 cupful corn meal,
