Some' excellent advice la given to
buyers and shippers of eggs In an
open letter sent out by the United
States department of agriculture. If
followed, It would, mean a saving of
over $45,000,000 annually, fully that
amount of waste being the result of
Improper handling, or due to small
eggs, cracked and broken eggs, dirty,
stale, batched or rotten eggs.
This loss, It will readily be seen, is
felt by considers , and producers
alike, and It la a matter of Interest to
all to see that eggs are carefully mar
keted and properly bandied. The gov
ernment offers the following sugges
tions: '
"Encourage the production of largo
eggs. This can be accomplished by
keeping pure bred, 'general purpose'
breed of fowls, batching only the egg I
that weigh at least two ounces apiece
and from only the most vigorous
tock. ' '
"A year-around observation of New
Tork egg receipts showed that over 12
per cent were dirty shelled, and sold
for a lower price on this account. If
one nest Is provided tor each six bens.
In a cool, dark place, kept clean and
Termln free, dirty eggs will be reduced
to a minimum.
"More than ten per cent of the eggs
received In New York during the year
are 'seconds' because they are stale.
Tell your egg men that gathering the
eggs every afternoon, or twice dally

keted, and marketing at least once a
week and more frequently In the sum
mer time, will reduce the number of
stale eggs greatly.
"Can you convince your trade that

farmer thinks they are good, reliable
food urge him to eat them at home.
For, since the egg buyer can afford to
pay more for large, clean, fresh, whole
shelled eggs. It Is good business for
the farmer to use small, dirty, crack
ed eggs at home."
The letter closes with directions to
the packing bouses as to tlw best
means of handling eggs before ship

The letter might have given some
valuable hints as to keeping the price
of eggs from soaring above the beads
of the consumers during the winter
months, but we should be thankful for
small favors. ,
