million dollars. While, perhaps, none
of (he makers of alum powders indi
vidually can ohow so largo earniugs
yet their profits are enormous.
A business so profitable, will always
attract to itself those wjiomi greed will
cause them to utterly disregard the
effect their tralllc may have upon the
health or life of others.
Alum buking powders are introduced
laigtdy by gifts, prises aud lottery
schemes. A pieco of glassware or
China, a child's wagon, sled,
a pewter poon or some other
article of attractive appearance, but ol
small intrinsic value or cost is given
with each purchase or a number is at
tached to the can which entitles the
cimloiiier to a similarly numbered arti
cle or to a piUe of some kind. It is in
some such way as this that the tr.ido
iu slum and smmouia baking powders,
which has now attained such giant
proportions snd their consumption by
the public which has reached an ex
tent which is truly alarming.
The highest authorities of all coun
tries condemn the use of alum in
bread without reserve. In America
the most dlFlinguiohed physicians,
chemists and hyuicnlxts have declared

the subject of pure food, and its effect
upon the system, has been more fully

tended experiments by the scientists,
so serious a matter is the use of slum

enacted to prevent it. Those laws are
rigidly enforced, and Uio salt of nlnni
baking powders would not be permitted
for an hour. Any one who attempted
to make them for use in food, or at
tempted to uo thorn for ruining broad,
biscuit or cake would suaer severe
tenuities.
The ill effects upon th system -of
food raised by alum baking powders
are the more dangerous because of
their insidious character. It would be
less dangerous to the community were
it fatal at onco, for thou such food
would bo avoided ; but their deleterious
action because imperceptible at first is
nu less certain.

"Absolutely Pure," as applied to bak
ing powders. Two of the largest sell

other containing ammonia and both
of those druvgod buking powdors have
stumped upon their labels and circu
lars those words absolutely pure, as a
matter of fact they are "Absolutely
