As soon as the milk thick ens it Is ready for use, for at that time the bacteria are most active and the flavor Is best. The bottles are all examined and the best one is used for the mother starter. When, a quantity Is needed for putting Into cream, a small amount of mother starter Is used to Inoculate a can full ot scalded and cooled skimmed milk. This Is set aside to ripen and Is then added to the cream before the ripen ing process begins. Skim milk la preferred as a starter because the ab sence ot fat seems to aid in the rapid development of lactic acid bacteria. Skim milk for a starter should be heated to a temperature of 170 de grees F. for about 20 minutes, then cooled to 70 degrees F. and a small amount of the mother starter added. As soon as It Is thick It Is ready fot use. If the right kind ot bacteria are present It should have a mild acid taste and leave no disagreeable aftei taste. It It Is desired to use a pure cul ture of lactic acid bacteria, which can be obtained from any dairy suppl) house, the directions found on th package should be followed In mak Ing the mother starter, after which the process Is the same as with the natural starter. The advantages ot using a starter are: first, it makes It easier to get a uniformly sour cream which can be churned easier than sweet cream, second, It makes a better flavored butter than can be made from sweet cream or from cream that has had no starter, provided, ot course, that the starter Is good; and third, it makes a more uniform product.
