The only true knish west of Brooklyn
"Sorry," Allan Shapiro told his disap
pointed customer, as he explained that he
was training a new cook. It was not a good
day for custom knishes.
Shapiro may not have the hold-the
pickles-hold-the-lettuce flexibility to work
at Burger King, but he does have a talent
for making knishes — one of the most
popular food items at Eugene's Saturday
Market.
But what's a knish?
As the sign in front of Shapiro's booth
explains, boiled potatoes are mashed,
sauteed onions are mixed in, and
mushrooms, cheese and spinach are add
ed, if desired. The Big Mac-sized food is
then "lightly fried" in vegetable oil.
Shapiro, a self-described "New York
refugee," came to Oregon four years ago
before opening his booth, "Delicious
Knishes," about a year ago.
He is a full-time certified public accoun
tant, but says his Saturday stints at the
market are a "release" from the tensions
of the financial world.
"You can't always be a good guy when
you're an accountant," he said. "I can
always be a good guy here.

"Everybody comes here and smiles
when they walk away with a delicious
knish."
When asked whether the local public
ever approaches his locally-known fare
with apprehension, his Brooklyn shyness
surfaces.
"Has anybody here never had a knish
before?" he shouted to the crowd.
"(Anybody) getting their first knish?"
"I never have," a lady volunteered.
"You see! That happens all the time,"
Shapiro said triumphantly.
He says that he is the only knish cook in
Eugene, but has been encouraged by the
loyalty of his customers and the openness
of people at the Saturday Market to try
new foods.
"It's an ethnic Jewish food that's real
good — and I'm real good at it," he said.
"New York-style knishes are not
duplicated any place except here."
"I can testify to that," added Lou Zaslotf,
a native New Yorker who is a regular at
Shapiro's stand. "It's the only one on the
West Coast that tastes anywhere close to
it.
"He's captured the taste...he's got it
all."

The Market menu
After purchasing a pottery soap dish, trying on a pair of hand
made leather shoes, and signing a petition circulated by a woman
wearing a "free marijuana" sandwich board, there's only one thing
left to do at the Saturday Market.. .eat.
A wide variety of ethnic and health food is available at the
market. There are even "totally decadent desserts" for those into
the whipped cream scene. And it's easy to try several different
foods at prices anyone can swallow. For example:
Dana's Cheesecake Bakery offers cheesecake, poppyseed cake
or carrot cake for $1.50 a slice.
Much-famed Rita's Burritos has its standard burrito for $2.25.
Add avocado and black olives and you have the deluxe burrito for
$2.50.
Liberty Coffee Company features cafe anisette, cafe de cacao
and many other coffee-related beverages for 75 to 90 cents.
Family Homesteader Hand-Squeezed Lemonade serves lemonade
plain or with strawberry, honey or raspberry. Prices run from 75 to
95 cents.
Lulu's Smoothies offers its specialty in three different sizes, pric
ed from 75 cents. Lulu's sign describes a smoothie as a "thick blend
of apple juice, bananas and berries." But don't be fooled by this
Gerberesque description; smoothies are tasty for people of all ages.
Vinnie's Pizza serves thin-crusted cheese pizza with olives,
mushrooms or pepperoni, priced from $1.25 to $1.75.
El Burrito Shop's menu lists burritos for $2.50 (with roast beef),
as well as tacos, nachos and taco burritos.
Chicken and Chips serves "chicken in a pocket" or "chicken on
a stick" for $2.00. They also have "fresh" potato chips for 75 cents.
The Neon Buffalo is run by Carl Stiefbold, a researcher in the
University's molecular biology department, and his wife, Judy. They
serve stuffed mushrooms, ravioli and Italian submarine sandwiches
at prices from $1.75 to $3. For a once-in-a-lifetime drink, try the Buf
falo’s "master cleanser" — a hot lemon drink with maple syrup and
cayenne pepper.
Fat Saturdays serves gingerbread for 35 cents, strawberry crepes
or fresh fruit salad with whipped cream for $1.50.
Nice Rice has a bowl of rice with mushrooms, carrots, celery,
onions and broccoli for $1.25.
Anita's South American Empanadas features the "Chilean," a
mixture of ground beef, onion, raisins, egg and olives, or the "veg
gie," with broccoli, mushrooms and cheese, for $1.75.
Veggie Heaven has a choice of tempura, sesame chicken or dip
ped and fried mushrooms for $2.50.
Loven Oven Calzone-Pocket Pizza has meat calzone for $2.50 or
vegetarian calzone for $2. They also have huge cinnamon rolls for
$1.
The Tofu Palace features the Tia Special ("one-third pound
seasoned, sauteed tofu topped with avocados, tomatoes, onions,
sprouts and tofu sour cream, wrapped in a soft flour tortilla") for
$2.25.
Oodles of Noodles serves a choice of egg noodles, russian
noodles or manicotti for $2.25 a bowl, $1.75 a half-order.
Delicious Knishes offers a potato knish for $1.25. It's $1.75 with
mushrooms and cheddar cheese and $2 with spinach, mushrooms
and cheddar.
Harmony Kitchen features strawberry shortcake for $1.50,
pocket breakfasts (one egg, sprouts and salza in pocket bread) for
$1, or yogi tea (black tea, spices, honey and milk) for 75 cents.
The Oregon Cafe has a choice of entrees for $2.75, all served
with green salad and potato salad or corn bread. Barbecue chicken,
barbecue ribs ("chemical free") and chili are the entrees.
If you need a sugar fix after eating, chase down Linda Utne. She
pushes her Totally Decadent Desserts cart around the market with
chocolate-dipped strawberries for 40 cents, strawberry and kiwi pie
for $1 and Viennese chocolate cake for $1.25.
The Saturday Market is open from 10 a.m. to 5 p.m. every Satur
day at 8th Avenue and Oak Street in downtown Eugene.
