From her study of the food situation. Miss Tingle has formulated the fol lowing principles: Waste Nothing. Avoid using as much as possible tlie foods wo must export to our allies. Save every scrap of food. Cook meats so as to save fats. Do not serve meats on a dish that is cov ered with fat. Use fish in some form every day. Eat chickens and eggs instead of! beef and mutton. I Use nuts instead of meat. They: have the same food values and will not be used for the soldiers. Use oleomargarine for cooking. It is as nutritious as butter. Do not waste a drop of milk. Make cottage cheese of the sour milk. Eat local vegetables* and thus save cost of transportation. If you #ant another slice of bfread, eat another po tato. ! Eat Less Sugar. Cut your sugar consumption in half. Most People eat twice as much su gar as they need. Instead of sugar eat sweet fruits, such as dates and figs. In the matter of substitutions, some knowledge of food values is necessary, says Miss Tingle. Unwise substitu tions may result in underfeeding or malnutrition. , •‘It is a question of widening our tastes,” said Miss Tingle. “We must know our foods and use them.
