. Holiday Macaroni Casserole
I Makes 4-6 servings)
1 tblsp. salt
3 quarts boiling water (8 ounces)
2 cups elbow macaroni
2 tblsp. butter or margarine
Vi cup chopped onion ,
J4 cup chopped celery
3 cups tomato juice
1 tsp. salt
1 tsp. prepared horse-radish
1 tsp. 'prepared mustard
1 tblsp. Worcestershire sauce
1 lb. frankfurters, sliced
Vi cup chopped sweet mixed
pickles
Add 1 tablespoon salt to rapidly
boiling water. Gradually add mac-!
aroni so that water continues to
boil. Cook uncovered, stirring oc-j
casionally, until tender. Drain in
colander.
Melt butler or margarine over1
low heat. Add onion and celerv
and saute until tender. Add mac
aroni and remaining ingredients
mix well. Cook over low heat 10
minutes.
Turn into a greased l'j quart
casserole and sprinkle with grated
cheese, if desired. Cover and bake
in moderate oven (350 degrees) IS
minutes.
Maraschino Cherry Wreath Fruit
Cake
(Makes 1 9-inch cake)
1 cup shortening (softened)
1 cup sugar
4 eggs, separated
1 tcashoon mace
2 tblsp. brandy
2 cups sifted cake flour
1 cup chopped waluts
Vi cup chopped candied orange
peel
'4 cup chopped candied pine
apple 'j cup shredded coconut
'i cup seedless raisins
'2 cup puartered maraschino cher
ries, well drained (about 20
cherries)
l'i teaspoon salt
Vn teaspoon cream of tartar
Cream butter or margarine and
sugar until light and fluffy. Beat
in egg yolks, one at a time. Add
vanilla, mace and brandy; mix
well. Gradually add l'j cups
flour beating after each addition.
Combine remaining Vi cup flour
with nuts and truits; told into bat
ter. Combine egg whites and salt;
