Tasty Dishes

Here are recipes using the small-1
er slices and cubes in tempting,
budget casserole dishes:
Ham Squares with Egg Sauce
(4 servings)
One cud finely chopped cooked i
ham, 2 cups sifted all purpose
flour, 1 tablespoon double-acting
baking powder, 1 teaspoon salt.
1 tablespoon sugar, cup melted
shortening, 1 egg, well beaten, 1
cup tomato juice.
Sift together all dry Ingredients.
Stir in ham. Combine remaining
ingredients. Add all at once to
flour mixture, stirring quickly un
til just mixed and of a lumpy ap
pearance. Spread Into a square baking pan
(8 x 8 x 2-inches, bottom rubbed
with shortening). Bake in a hot
oven (425 degrees F.) for 25 min
utes. Cut into six squares. Top
with Golden Egg Sauce.
Golden Egg Sauce
Two hard - cooked eggs, sliced,
chopped parsley, V4 pound Cheddar
type cheese, 1V4 cups milk, 1
teaspoon prepared mustard, V4
teaspoon salt.
Combine cheese, milk, mustard
and salt in a saucepan. Cook over
low heat until cheese is melted.
Add eggs and parsley. Serve hot.
Ham and Rice Deluxe
(4 servings)
Sixteen one - inch cubes cooked
ham, 1 cup uncooked rice, V cup
chopped parsley, 1 cup chicken
bouillon, 1 tablespoon cornstarch,
Yi cup cooked peas, 1 cup mush
rooms, 2 tablespoons butter or for
tified margarine.
Cook rice in about 10 cups boil
ing, salted water until light and
fluffy. When done, drain. Mix with
parsley and pack into custard cups.
Keep hot. Thicken bouillon with
cornstarch. Cook 5 minutes. Add
conked peas and ham cubes. Brown
mushrooms in butter. Arange ham
mixture and mushrooms on plat
ter. Turn rice cups onto platter
around ham.
