The April meeting of the East
'Douglas Extension unit was held
Wednesday afternoon at the lovely
: home of Mrs. Taylor McCord on
the banks or the North Umpqiia
i river near Glide. A moat enjoyable
day was spent by the members
preparing an outdoor meal. The
project leaders were Mrs. George
Case beer and Mrs. Vern Shrum.

when served with a fruit conserve.
Dried fruits, now abundant,
j make conserves and marmalades
of rich flavor and require very
little cooking skill. Try a few
now to brighten your economy
main dishes.
Apricot Almond Marmalad
(Makot approximately 1 pint)
Two cups dried apricots. M
cups granulated sugar, V cup
sliced blanched almonds. 1 cup
orange juice, 2 teaspoons grated
j orange rind, 2 teaspoons grated
I lemond rind.
j Rinse apricots, cover with water
' and cook until soft and water is
1 well evaporated. 3d to 40 minutes,
i Beat appricots until smooth, add
j sugar, almonds, orange juice and
i rinds, and cook about 30 minutes
'stirring frequently. Pour into hot
glasses and when cold, seal with
paraffin,
j Spictd Stuffed Prunes
! (Make about 2 pints)
Five cups uncooked prunes, 1
cup white suyar. 3 cups brown
sugar (packed), 9 cups water. 2
cups cider vinegar, 3 tablespoons
pickling spices (in hag), live 4
inch pieces stick cinnamon, 2 ta
blespoons honey. 6 thin slices
whole orange (rind included). 1
tablespoon rum flavoring, walnut
meats.
Rinse prunes. Combine sugars,
water, vinegar, spices, honey and
slices of omnue in laree kettle and
heat to boiling. Add prunes and
boil 1 to 1'4 hours (more water
may be added as and if needed).
Remove from he.it and add rum
flavoring. Cool. Lift prunes from
syrup, cut down one side and re
move pits. Refill with walnuts.
Pack prunes in jars, topping
each jar with a slice of orange.
Set jars in cold water, bring to
boil, and continue boiling until
I prunes are heated through. Finish
filling jars with boiling syrup. Seal
while hot.
