It's a gold mine of down-lo-earth wonder ful recipes. All the family liked these three particularly. Baktd Cabbaga Serves 4 One medium-sized head of cab bage, 1 teaspoon salt. U teaspoon pepper, 'a cup graled cheese, 1 '-a cups hot milk, 1 tablespoon flour, 2 tablespoons butter. Cut cabbage in wedges s inch thick. Cook in salt water for 10 minutes. Drain and place cabbage in a Rreased casserole. Sprinkle with flour, salt and pepper. Dot with butter. Add hot milk and top wilh grated cheese. Bake at 350 decrees F. (moderate oven) for 35 minutes. Crtamtd Cabbaga and Dried Btaf (Strv.t 4) One-half lar.?e head of cabbage, ' pound dried beef, -V cups medium white sauce, Va cup but tered crumbs. ' Cook coarsely chopped cabbage in salt water until tender. Drain. Soak chooped dried beef in 'n cup warm water for 10 minutes. Place cabbage and dried beef in alternate layers in a greased cas serole. Pour white sauce over mixture and top with buttered crumbs. Bake at 350 degrees F. (moderate oven) for 25 minutes. Dutch Cabbaga Sarves i One medium-sized head of cab bage, 6 slices bacon, 2 tablespoons flour, 3 tablespoons fat, 1 tea spoon salt, Yt teaspoon pepper, 6 medium-sized potatoes, 2 cups cab bage broth or tomato juice. Shred cabbage coarsely and cook in salt water until tender. Cut bacon in small pieces and fry until crisp. Blend flour wilh 3 tablespoons bacon drippings and brown. Add seasoning and liquid or tomato juice to make a gravy. Add sauce to cabbage and place in a greased baking dish. Cook po tatoes in salt water until soft and then mash them.
