i 9 Roast Turkey In Old-Style Way Try These Special Dishes On Holiday By GAYNOR MADDOX NBA Staff Writer Everyone is looking for special recipes now for Thanksgiving. Try these three each fine in its own special way. Minted Peas (Serves 4) Thurs., Nov, 17, 1949 The News-Review, Roseburg, Ore. By GAYNOR MADbOX Shell and wash two pounds fresh peas Just before cooking. Cook not more than 8 to 12 min utes in a small amount of boiling salted water (about 1 Inch of wa ter in a covered pan). Add sev eral of the pea pods and several sprigs of fresh mint while peas are cooking. Remove pods and mint before serving. Season with butter or fortified margarine. Serve at once while peas are fresh and sweet and their color Is a beautiful bright green. Pumpkin Tarts (Yield: 14 tarts, 3-Inch dlametes) Two-thirds cup sugar, 1 table spoon flour, 1 teaspoon each, cin namon and ginger, 1-8 teaspoon cloves, 1-2 teaspoon salt, 1-3 cup unsulphured molasses, 2 cups mashed pumpkin, 3 eggs, 1 cup undiluted evaporated milk, pas try, using 2 cups flour. Combine first six ingredients. Add molasses and pumpkin. Beat in eggs. Add milk; mix well and pour into pastry -lined cupcake pans. Bake 35 minutes In modar alely hot oven (400 degrees F.) French Apple Pie Eight medium-sized apples, 1 nine-inch pie shell, unbaked, 1-4 cup flour, 1 cup sugar, 1-3 cup butter or forltfied margarine, 1-4 teaspoon nutmeg, 1-2 teaspoon allspice, 1-4 teaspoon cinnamon. Slice half the apples Into the pie shell. Crumble flour, sugar, spices and butter together. Sprin kle half the crumbs over apples. Top with remaining sliced apples and cover with remaining crumbs. Place a cover over pie and bake 30 minutes in moder ate oven (350 degrees F.) Re move cover and bake 30 minutes longer. Serve hot or cold, but pie is a little runny when hot. Freda De Knight, In this writ er's judgment, Is one of the best cooks the land over. And her rec ipe for old-fashioned roast turkey is one of the most satisfactory. Here It Is, taken from her "A Date With a Dish." Old-Fathioned Roast Turkey (Allow 1-2 to 3-4 pound per person) Twelve to 15-pound turkey, 1 tablespoon salt, 1 tablespoon pap rika, 2 tablespoons bacon fat, 1 teaspoon garlic, 1-2 teaspon pep per. Singe turkey while dry and re move all pin feathers. Clean in side and out. Wash and drv. Sprinkle inside and out with salt and pepper. Fill with your favor ite stuffing. Sew up or close with skewers; neck cavity may be till ed with stuffing, if desired. Fold wing tip up and under back. (Never stuff turkey tightly, al low for expansion.) Rub turkey well with bacon fat, salt, pepper, paprika, and garlic salt. Cover with a clean white cloth which has been dipped in melted fat or milk. Cover well. Roast slowly uncovered, mak ing sure cloth stays damp at oven temperature, 300 degrees F. Al low 20 minutes per pound. Baste from time to time with drippings, brown on all sides. Cloth may be removed during last half hour, so the turkey skin will be brown and crisp. 1 Boil giblets and neck with cel ery tops, onions, and seasonings to make gravy. Cranberries, of course. But how to serve them that's the next Thanksgiving question. Here is an answer you will enjoy. ' Cranberry Nut Relish Four cups cranberries, 1 or ange, quartered and seeded, 1 lemon, quartered and seeded, 1-2 cup 'seedless raisins, 1 1-2 cups sugar, 1-2 cup chopped walnuts. Put cranberries, fruit and rais ins through food chopper using coarse blade. Mix in sugar. Let stand In refrigerator an hour or so to blend flavors.
