Cook Goose In Oriental Style BY GAYNOR MADDO NEA Staff Writer Ted Young, American born, Is one of New York's most distin guished restaurateurs. He sug gests steamed Oriental goose as a inanKsgiving treat. "The Chinese use it as a tes- tive dish," he explains. "Except for a little rice, they serve noth lng else with it. They concentrate on .tne wonctermi goose ltseu , Here it Ted Young's recipe, explained step by step to your food editor: Steamed Oriental Goose (Serves 8) Twelve-pound goose, 2 table spoons salt, 3 tablespoons sugar, 1-2 teaspoon pepper, 1 tablespoon ground cinnamon, 2 ounces whis key or sherry or water, 1-2 pound Chinese cream cheese (Foo Yee) (obtainable at Chinese grocery), 2 cloves garlic, chopped fine. Select a goose with pliable, yel low bill and fat yellow feet. Singe, remove pin-feathers, wash and scrub. Dry thoroughly. Make a paste ot the sugar, salt, pepper, whiskey or sherry or water, cin namon, Chinese cream cheese (Foo Yee). Chop garlic fine and work into the paste. Rub inside uplift ft of goose liberally with the paste, then rub outside with it. Place goose In large steamer and steam for at least 3 hours, until tender. Serve with rice and head lettuce without dressing. Thicken liquid left In steamer with corn starch. Cook until smooth. Serve with the sliced goose. Note: If Chinese cream cheese (Foo Yee) cannot be obtained, make the paste without it. Ted Young says Chinese duck is popular with his gourmet pa trons. To get that con sistency and flavor, use evapo rated milk in the recipe. The fat of this popular dairy food, now In abundant supply, Is homogeniz ed. That's why its use In pump kin pie is so successful. Pumpkin Checkerboard Pie (6 servings) One and one-half cups canned or sieved cooked pumpkin, 3 eggs, 2-3 cup brown sugar, 1-2 teaspoon ginger, 1-4 teaspoon nut meg, 1 teaspoon cinnamon, 1-2 teaspoon salt, 1 1-2 cups evapo rated milk, 1-2 cup water, plain or cheese pastry for one-crust 10 -inch pie, 1 package snappy cheese. Mix pumpkin with all other In gredients. Pour into deep pie plate lined with plain or cheese pastry, make lattice top with strips of passtry and bake in a hot oven 425 degrees F. for 10 minutes. Then reduce heat and bake 45 minutes longer or until the filling is firm and the crust delicately browned. When done, place rounds cut from a roll of snappy cheese on each point where the lattice crosses and re turn to the oven for 2 or 3 min utes to soften the cheese slightly. Or, if the pie is to be reheated for serving, let it cool when re moved from the oven, then be fore reheating, place the rounds of cheese on the pastry and heat in a moderate oven 350 degrees F. for about 8 minutes. The richness of evaporated milk combines smoothly with dark colored sweet potatoes to produce another special Thanks giving dessert served warm with ice cream. Sweet Potato Pone With loe Cream (Serves 6-8) One quart vanilla or butter- pecan ice cream (bulk), 3-4 cuo evaporated milk, 3-4 cup water, l pound deep colored sweet po tatoes, uncooked, 2-3 cup sugar. 1-3 cup butter, melted, 2 eggs. wen Deaten, d-4 teaspoon salt, l-t teaspoon cinnamon, 1 teaspoon ginger, l tablespoon grated or- agne rind, 1-4 teaspoon grated nutmeg. 1 Place ice cream in freezing compartment of refrigerator un til needed. Combine evaporated milk and water; scald. Wash. peel and grate the sweet potatoes ana mix tnem at once with all the other ingredients. Pour into a well-buttered square baking dish and bake in a moderate oven (350 degrees F.) for 1 hour or un til firm. Serve warm. Roast Chinese Duck (Serves 4) Six-pound duckling, 1 leek. 2 cloves garlic, 1-2 teaspoon pep per, 3 tablespoons sugar, 3-4 tea spoon salt, 2 ounces soybean sauce, ' 1-2 ounce whiskey or sherry or stock, 2 ounces water. Singe, wash and dry duck. Place all other ingredients in saucepan and bring to boil. Tie neck end of duck and pour in this stock. Tie other end. Place duck on rack of roasting pan with a little water in pan. Roast in moderate oven (350 degrees F.) until brown (about 1 1-4 hours). Keep turning while roast ing to get even color. Baste fre quently with following mixture: 2 teaspoons honey, 2 teaspoons soybean sauce, 1 cup water. Bring to boil. Serve drippings over the sliced duck.
