Veal Balls Fancy Dish For Sunday By GAYNOR MADDOX NEA Staff Writer Here's a de luxe meat dish to make Sunday's dinner particu larly welcome: Veal Balls In Mushroom Sour Cream Sauce (4 servings) One pound chopped veal, 1 clove garlic, minced, 1 teaspoon salt, 1-16 teaspoon pepper, 1-4 cup milk, 1 egg, beaten, 1-2 cup fine dry bread crumbs, 1-4 cup fat. 1-2 teaspoon Worcestershire sauce, 2 tablespoons flour, one Jounce can boiled in - butter whole mushroom crowns, 1 1-2 cups sour cream. Melt fat in frying pan over moderate heat, add .Worcester shire sauce. Brown patties on both sides. Remove patties. Stir In flour. - Add mushroom broth, mushrooms, quartered, and sour cream. Cook, stirring constantly, until sauce thickens and boils. Add veal patties. Cover and heat over low heat until thoroughly hot, about 20 minutes. Serve, if desired, on hot cooked noodles tossed with poppy seeds. For dessert, serve a warm orange-apple deep dish pie. Deep-Dish Orange Apple Pi (Serves 4-6) Two tablespoons flour, 1-2 cup sugar, 1-4 teaspoon nutmeg, 1-4 teaspoon salt, 1-2 teaspoon cin namon, 1 cup orange Juice, 2 ta blespoons lemon juice, 2 table spoons butter or fortified mar garine, 1 teaspoon grated lemon rind, 7 cups sliced, quartered, pared, cored apples, 1-4-lnch thick, pastry" for 1-crust pie. Combine first 7 Ingredients; simmer, stirring until thickened. Remove from heat; add butter and lemon rind. Arrange appies in a greased 10x6x2-inch baking dish; pour sauce over them; toss well. Roll pastry large enough to allow 1-2-Inch overhanging edge all around.
